My beautiful Hungarian grandmother Julianna used to make this every Christmas for our family in Sydney, Australia. Sadly she is no longer with us, but this brings back so many special memories (she was an amazing cook!) Hopefully I might practise and make it this Christmas for my family. I’m Hungarian, have seen many recipes and videos but this one is so beautiful. I really like the shape and the size of the roll, the ratios are very very good and the sliced pastry just looks amazing! This was a tradition every Christmas in our house growing up; my mother was a very good cook but she didn't bake often. She would always make two of each of the "bejgli" and they would never last till New Years! Between my father and I we would finish them off very quickly!As I said, my mother was not very much into baking, but one of my absolute favorite treats was when she made "rizskoch;" I've seen a few videos online about how to make it but would love to see you prepare it as your videos are simple, easy to follow and well presented. And I'm sure Lassi would approve as well.Thank you for all your wonderful videos, they bring back many memories of growing up in a Hungarian household as a young boy. Boldog Uj Evet, happy 2018!

I have 3 questions for you if you don't mind! 1) If I wanted to substitute yeast for sourdough starter or at least some of the dough for sourdough starter for a slightly more sour taste to go with the sweetness (and because I imagine once upon a time they probably all made it that way), do you happen to know how much sourdough starter I should use?? 2) If I don't have rum, do I need to soak the raisins in anything else e.g. water, or is the hot milk good enough? 3) What should I substitute lard with? I really appreciate the interesting and unexpected instructions on letting the dough with brushed on egg (both yoke and whites) dry before next coat and baking! I can see what a difference it made with that beautiful crust. Thanks so much!

I try to answer your questions: 1.) Honestly, I've never heard about using sourdough in cakes/pastries, just bread. Usually this rolls are made with yeast or baking powder. But I've checked the internet and found some "bejgli" recipes with sourdough (I was surprised :))) Unfortunately these recipes are different then mine (so you just can't replace the yeast with sourdough starter), and are in Hungarian. 2) If your raisins are dry (I mean really dry and hard) you should soak them in lukewarm water. If they are on a softer side it's not necessary. 3) you can substitute the lard with butter or margarine. I hope these answers help. Happy New Year to you!

The Kifli recipe is using almost the same ingredients, just the amounts are different. (more flour, less sugar, less butter. I've never made kifli at home (it is wildly available in the stores in Hungary). But I can find a recipe to you if you'd like.

Yes, sometimes it called "kalács" in Hungary. "diós kalács" (with walnut) and "mákos kalács" with poppy seeds. There are several version of this recipe, sometimes with more yeast dough and less filling, sometimes with lots of filling. I hope it helps!

So makosz kalacs in Hungarian is makovy kolac in Slovak my grandma and my mum used to make this on sunday ,it have two siblings so my mum have to make 3 pieces ,no sharing with makosz kalacs ... my favorite pastry ! I'm sorry I don't have a recipe with cups and spoons. I understand your problem with the measuring. Maybe you can try with Google, there are lots of type of converters. The problem is, you will get strange amounts which are hard to measure. Mainly for the dough you should add the exact amounts. Happy New Year to you!

its tough to get fresh yeast these days but I got some instant yeast, how much would be required?

You can use instant yeast, it works well. Here, in Hungary one packet of dry yeast is 7 grams, which is equal to 25 grams of fresh yeast. So you will need a little bit more of half a packet (there won't be a problem if you use more, no need to measure it on a pharmacy scale :D). If I use instant yeast, I use it as fresh: lukewarm milk with a little sugar, pour the yeast in and let it rise. I hope it helps!

Vanilla sugar is a vanilla flavored fine granulated/caster sugar. It is usually sold in small packet (in the baking isles where baking powder, dry yeast are). I checked - it is available at Walmart. (when I lived in NY, I also found it in Food Bazaar). But you can make it at home: pour some sugar into a jar and and one or two vanilla pods into it. Close the jar and some days later it will be a vanilla sugar. I hope it helps.

Honestly, I've never heard about Kolache, but I googled it and it seems very similar, when they make Kolache as a roll with poppy seed or walnut filling. Maybe there are some differences of the recipe of the dough, but there are differences of the Hungarian Bejgli recipes too (everybody have their own perfect version :D) Many thanks for your comment!

That's what Nagymamma called it. But to hear that you've never heard of made me curious enough to look into the matter. Looks like the origin is Czech or one of those Slovak nations. Maybe she called it by that name rather than the Hungarian name. Interesting. And she made kifli, and csoroge, and kapors langos.

I think maybe it's possible that your Nagymama called it "kalács" (it sounds similar to Kolache, but it's a Hungarian name for challah). We sometimes call this poppy seed rolls to "Mákos Kalács" /poppy seed challah/.

I'd bet you are right! She made what I thought I heard as, "copishlangush" I remember this bread with dill fronds and flowers all over it. I made what I thought it was with pizza dough. 30 years later I figured it out thanks to YOU. It was Langos with dill...Kapors? I made your Langos with dill fronds in the dough and topped with the flowers and your garlic wash. That's it. It was Kopros Langos. You Rock!!

Rolls came out delicious but only because I had to improvise. The recipe is lacking many crucial details and the flour measurements were way off so I ended up having to add a bunch.
