I've been binging lots of Udonsoba while eating my ramen at night lately, and this is one of the best shops I've seen. A small cozy store with lots of options to pick from + interaction with the chef, an absolute delight! Wish only the best for the staff and the restaurant~
Why does the omelette always look just underdone when it’s cut open , I would seriously not eat that but all the curry and rice I would smash

The method of placing a half-cooked omelet on top and cutting it open was created around 1930. Many Japanese people like it because the creamy taste of the soft-boiled eggs makes the spiciness of the curry milder. For Japanese people, it plays almost the same role as fresh cheese in Europe. It is understandable that Europeans have an aversion to soft-boiled eggs, given the historical background that eggs in Europe deteriorated in quality by the time they reached the market, and that half-boiled eggs caused food poisoning. Japanese eggs are almost free of salmonella and are so fresh that they can be eaten raw.
