I lived in Japan for 2 years in the 1970's and came to love the Japanese people. Now I am an older man, living with cancer. Late at night, when I can't sleep, I am comforted when I watch these videos of small business chefs earning an honest living cooking delicious food for loyal customers. This chef is a subarashii consumate chef. I see it in his efficient precise moves. Thank, chef and vidoegrapher, for collaborating to bring this wonderful experience to my home.

無駄のない動きの上に妥協を許さない感じが出ててかっこいいのはもちろんなんだけど、 これだけ余裕の無い中でちゃんとお客さんに一言添えて料理を提供していて、とても感動した。 こういう基本的なところを大切にしてる店には何度も通いたくなるな。

I marvel at how every aspect of this kitchen, down to the drainage on the floor, is so functional, every square cm of space is used and serves an important purpose. This chef reminds me of a renowned pianist. He's stroking effortlessly the various components in the kitchen with consummate timing like the keys on a piano. There’s no difference between a renowned concert pianist and this wonderful chef as far as I’m concerned - they are both incredibly well practised and talented at what they do. Except when it comes to adulation and rewards the pianist gets it every time. But I know who I’d rather take any day, the unsung chef, of whom there are thousand and thousands of these heroes, who toil and toil to selflessly meet our basic need.

料理人ってすげぇよな。 券売機にあるメニュー全部作れるのは当然として、一つ一つ短い時間でしっかりクォリティに高い料理作ってくれる。 忙しい時は延々と休まず作ってる。 この店主さんのような人がガッツリ修行がんばってくれたおかげで俺らがうまいもん食えてると思うとありがたいね。

I love the idea that he prep the foods, cook the foods singlehandedly, if the main plan was you sell what you prep on that day and if all prep food were finished then he closed the shop, and not doing any extra mise en place on the day, that would be very awesome, no closing schedule, just sell what you had and prepare another one for tomorrow. No headache, no stress of working all alone, amazing!

This man is just living my dream life. Owns his own restaurant. No other kitchen staff, just him back there (Oba-san clearing the booth, but not cooking). Patient customers. Full house. Delicious food. Just doing what he does best: Cooking. No fights, no fuss, no dealing with employee schedules. Wake up, clean, prep, cook and enjoy the smiles of every patient customer who knows its worth the wait. The freaking dream man.

This Man is Clearly a Masterful Chef. Absolutely No wasted movements at all, Always serves his customers with a Happy face and kind words. Also if you haven't noticed he is in Much pain from Always being hunched over the wok and counters, but he tries to not show it . He sacrifices Every day to provide for his Family and to make his customers happy .

This chef needs to get recognized. He’s quick and he can multitask around his kitchen. Awesome. I also like that his kitchen is clean and tidy. He has everything in reach and it’s very organized. One day when I go to Japan, I’d like to try his food. His food makes me drool.

I love how he thickens his sauces to order. Most places would make a big batch of sauce and thicken it with a corn starch slurry (that whats in the bowl that he adds to sauces. It is corn starch and water) before service. This dude makes your sauce in the pan and thickens it right before serving. Basically, there are no shortcuts. This man is a real chef. No wasted movement and he doesn't need to think, he just does. Much respect from chef to chef.

That's how Chinese restaurants thicken sauce on each dish... I have never heard or seen any places that do what you have said. It just won't work having that prep before hand with so many variant of flavors & dishes... The thickening action has to be done when the food is about to be ready.

This chef hasn't done anything differently as regards to that. It is just a very basic Chinese cuisines thickening technique. Read the original post before you comment.

とても早いんだけど雑ではなく、むしろ作業全てが丁寧で均一的、それでいて声掛けの客対応までこなす姿が素晴らしい。そして厨房が綺麗で、どの動作も本当に一品にかける命と思いが伝わってくる。

What I love most is how efficient he is in this tight elongated kitchen. It’s such a pleasure to watch him move, almost like a dancer, gracefully going from one station to another, creating several different dishes simultaneously. He’s like a one man symphony-prepping, cooking, plating, serving, even washing dishes at one point. Truly a master at such young age. Bravo 👏👏

that's what 10,000 hours looks like. I'm sure he's done more, but the efficiency and beauty at his craft is mesmerizing. Everything is measured by feel, everything is literally done with little movement as possible. No unnecessary shaking or stirring. The prepwork, the cooking, the cutting, the chopping, everything is amazing.
