I lived in Umbria, Italy, for 5 months last year, and porchetta sandwiches were my go-to lunch. They were much more heavy on rosemary, salt, and black pepper, lighter on the other stuff (maybe a smidge of dill here and there). The pepper was the predominant flavor alongside the pork. I'm salivating just thinking about it...

I am impressed and hungry to make my own. Interestingly, I see the vertical fork 04:30 when eating evident again. It is amazing how different cultures use utensils. One might use chop sticks, whilst others use a knife and fork. Yet, even between the knife and fork crowd the articulation of its use is distinct. So much humanity in it all.
