Pork is the best meat out there, and no one rocks it better than Naga folks. The most yummiest pork i ate across the length and breadth of the country and beyond. Simple, hot as in really hot and packed with flavours. I am drooling while writing this comment..!!

I've got fernented bamboo from my Vietnamese friend today. This recipe look great, very simple. Only salt and dry pepper and sichuan perpercorn... ginger and garlic. I have all this in my kitchen, I'll try this tomorrow. I really excited to experience new cooking!! Thank you for sharing.

My friend mom cooked me this I fell in love... I always missed the taste so I tried to cook it watching KZbin but always failed to get that aroma and taste.. after many experiment my last experiment I put no garlic or ginger no spice just bambooshoot and red chillies and finally I got the raw taste of naga food I have been desperately looking for.

You need spicy ginger, not the ginger you are used to but the smaller ginger. It has a stronger distinct scent from the larger ginger, ask a proper naga from Nagaland if you can. Trust me, using the smaller spicier ginger which has a stronger aroma will really enhance the taste of your dish. Also try to get naga dried chilli because the chilli from your areas are bland and not very tasty compared to chillies from hill areas no pun intended.
