approx. 400-500 g of pork cutlets,
2 cups of water or stock,
400 g of button mushrooms,
1 onion,
1-2 cloves of garlic,
1/2 cup of heavy cream or milk (or half and half) - to taste,
approx. 2 tsp of potato starch or corn starch,
1 bay leaf,
few kernels of allspice,
seasonings to taste: salt, pepper, Herbs de Provence or any other dry herbs of choice,
some parsley or dill, optional
Beat your meat using a meat mallet, until thin. Sprinkle with seasonings. Heat a small amount of oil in a pan, add the meat in batches and sear, until golden on both sides. Set aside. To the same pan, add finely chopped onion and sliced mushrooms. Cook, for few minutes. Add finely chopped garlic. Add the meat back in, cover with liquid, add bay leaves and allspice. Simmer on low, for about 1 h and 20- 30 minutes or until very tender (cook for longer, if needed). Season to taste. Add cream or half and half to taste. Thicken the sauce with some slurry (starch with 1/3 cup of water, stock or milk). Serve over mashed potatoes, rice or barley and some crunchy slaw on the side. Enjoy!
