At first Babish branching out felt like he was abandoning his family, it felt like he was just trying to make money. But after meeting the new family I'm quite glad. I hope the Ratata stays. I grew up with them and it fits the style so much, they weren't really known about until nowadays.

Katsudon is such a comfort food dish. One of my favorite variations is mixing in some pickled veg or making kimchi fried rice to give it that pop.

I remember the first time i had Katsudon i was in Japan, and they served it with a bowl of pickled veg on the side, i remember it mostly cause i thought the eggs were cheese at first, but it was great.

Wow making your own Panko! That's something not even most Japanese people will do when they make tonkatsu, so impressive! Did you know katsudon in Japan for some reason is very closely associated with detective drama movies? In Japan we say that if you feed a suspect katsudon in their interrogation room they will think of their mom and confess!

Panko is made by cooking the breaddough with electricity instead of oven heat. that's why panko is so white. It doesn't get burned. also that method creates that airyness you don't get from normal breadcrumbs.

It’s kinda interesting how we all grow up differently hearing different sayings. I always knew the difference between Stalactites and stalagmites by the phrase, “hang tightly, stand mightily,” but not everyone heard that phrase growing up!

My dad taught me that the way to know the difference between stalactites and stalagmites is that stalactites have a C in their name, and they hang from the Ceiling, and stalagmites have a G in their name, and they stand on the Ground.

Panko is produced with an electrical current, which is why it appears and feels significantly different from blended breadcrumbs. Less oily/more cirspy because the oil can drain and water can escape, and tends to stay crispier when making a -don.

Cooking With Dog has the best recipes! Chef's karaage is unbelievable! I also recommend her garlic steak and rice burger recipes. Made her yakiniku recipe last week and it was fantastic, will be trying out her favorite hamburger recipe this week and I'm hyped!

Vkusno! Great job! Story time: This was one of the dishes that made me, for lack of a better word, a foodie and helped me discover that I legitimately love cooking. Yuri on Ice was very much a comfort show to me because of school stress in 2016. I always saw the gorgeous food they had in each episode, which made me want to learn about what each dish was, where I could eat them, and how to make them myself. That then led me to exploring the Asian food scene in my town, which I, despite being Asian myself, had barely known about until then. Long story short, I ended up working as a chef for about six months before the schedule got a bit too crazy between that and school (there's a reason being a chef is a full-time job.) But I'll always look at katsudon with so much love because it not only is one of my favorite dishes period from one of my favorite anime, but it helped me learn about and appreciate food so much more to the point that my entire feed is all cooking channels.

The way I was taught to remember which is which with stalagmites and stalactites is a little convoluted but works [though maybe slightly UK centric as you call tights, pantyhose over there]. Imagine a picnic, that gets invaded by ants, they get everywhere & in a panic to get them off of her the girl removes her tights. "So the mites [ants] crawl up & the tights come down." Oh all those cut off crusts were just begging for some soft boiled eggs. Few treats better than dipping your utter "soldiers" [strips of buttered toast] into runny egg yolk. Interesting dish & great video as always, many thanks.

That's not really panko though.. it's just breadcrumbs. Panko is made by baking with electrical current which would be pretty hard to do I imagine so just buy them.

I'm a filthy westerner, but I was under the impression that Panko is specifically cooked using electricity rather than heat. So you can't just make your own like you can with regular breadcrumbs, even if you use Japanese bread. You just made regular breadcrumbs, not Panko.

You said it yourself; you're a filthy westerner. Panko, in Japanese, literally translates to "bread crumbs/powder". He did make it correctly. In western countries, our Panko is a specific Panko, aka the one you described. Basically, you should learn more about other cultures before telling someone how to make a culturally appropriate dish. Lol

You probably don't care, but the way I learned which was which, Alvin was: stalagmite = might. You lift with all your might from picking something from the ground. Then, it was easy to remember that stalactite was the one up top.
