HOW TO MAKE SIMPOL PORK KINAMATISAN

This is not menudo, afritada, mechado, or kaldereta. This is Pork Kinamatisan! This Filipino dish combines pork belly and fresh ripe tomatoes to come up with a yummy result. Aside from tomatoes, the pork is also flavored with some fish sauce, sugar, and soy sauce. There’s a hint of spice care of the finger chilies. You’ll need extra cups of rice for this. INGREDIENTS
1 kilo pork belly
2 tablespoons cooking oil
2 tablespoons annatto oil (atsuete)
3 tablespoons fish sauce (patis)
3 cloves garlic
black pepper
1/4 cup vinegar
1 white onion
2 to 3 tomatoes
1 teaspoon white sugar
1 tablespoons soy sauce
2 to 3 green finger chilies (siling pangsigang)
