Good recipe....what did you use to thicken the broth?

Hi Thank you We use Tapioca Flour but Corn Starch is an equally nice thickener. If using Tapioca Flour mix 2 tbsp in 1/2 Cup cool/cold liquid, this will thicken about 4 cups heated broth. BUT be careful as it could over thicken and create a slur, still tastes great but won't pour nicely at all. Add Tapioca mix slowly to achieve gravy consistency. We are trying to stay away from corn products which is why we use tapioca. If using corn starch use same measurements as above for tapioca flour adding this to heated broth slowly to achieve gravy consistency. It will make a nice gravy. Both options have given us great gravies through the years.

9 lbs stuffed into my pressure cooker for 120 minutes then check it. If it does not explode from overload.
