*Ingredients:*
- 1.2 kg pork shoulder
- 20 g of sea salt (or regular salt)
- 2 tablespoons of marjoram
- Freshly ground black pepper
- 6-8 cloves of garlic
- 2 medium onions
- 300 g boletes (frozen or fresh)
- 200-300 ml of water
- Vegetable oil or olive oil for frying
Preparation:
1. First, prepare the meat. Clean the pork shoulder and cut it into strips and then into cubes about a centimeter by centimeter or one and a half. They don't have to be perfectly even as everything will fry slowly and come together to create a tasty dish.
2. If the meat has excess fat, chop it finely to render it and create a smooth spread.
3. Season the meat with salt, pepper, marjoram and crushed garlic. Lightly drizzle with oil or olive oil. You can do this on a board or in a separate bowl.
4. Mix the meat with spices well and set aside for some time to develop flavor.
5. Then start frying the meat over low heat until it becomes soft and tender.
6. Meanwhile, peel the onions and cut them into smaller pieces. Also add the onions to the meat and fry together...
7. When the meat and onion are ready, cover the pot and simmer the meat over low heat for about two hours. Remember to stir from time to time and check that nothing is burning.
8. After two hours, the meat will be soft and ready for the next step.
9. Now prepare the boletes. Add them together with water to the meat and simmer over low heat for another 20-30 minutes. The water should evaporate and the mushrooms will become soft.
10. After this time, the meat with mushrooms will be ready. Check if it is not too salty and season according to your preferences.
11. Finally, crush the spatula to obtain a smooth spread. Now you can pour them into jars and store them in the basement or refrigerator. It is ready to be spread on bread, rolls or other baked goods.
