Seems simple but fucking who has the time really to do that every day. Also means i need to free up large amounts of space in my freezer and... ahh just lots more than you expect. I swear none of y'all have cooked. There really isn't any difference between difficulty. Pork or beef isn't easier to cook. It is much easier to screw up pork though simply cause an overcooked porckchop will taste so much worse than an overcooked steak. Also acquiring a whole pig and roasting it is so much more work in a first world country than chucking a steak in the oven then searing it which you can do the same to a thick pork chop if you wanted to. I personally use only a cast iron and butter baste to cook my pork chops and steak, but they are identical in terms of difficulty. I do have to be more cautious with the pork though cause it has to be cooked perfectly to taste real good. I can mess up my steak a bit and still be content.

Whereas with pork it's either cooked or undercooked, there's no stages in it, you can only eat it "well done". Pork is cheaper and easier to make. End of story.

You could just use a normal grill, meat thermo, and beef fat. That's not hard to get for literally any human in the modern world.
@GamerTime_20026 ай бұрын
You can also do this in the oven instead of on the grill Get it to a good temp, and then just sear it. It really is simple. You're cooking the inside slow and the outside fast To break it down more, its just the fundamentals of cooking. Steak should be 135°f for safety. So you do a slow cook method such as the oven to get it most of the way there. Then you get a pan hot and put an oil/fat for good heat transfer and flavor. The high heat and direct contact with the oil for heat transfer you've got perfect temperature on the inside with crispy and flavorful outside.

@fordhouse8b9 ай бұрын
He uses all kinds of expensive equipment because he is rich. All you really need for a reverse sear is the skillet, an oven, and a thermometer. A cast iron skillet is just about the cheapest cookware you can find. Most people have ovens. And thermometers can be had for not much money at all, although I will admit that ever since I bought a Thermapen for about $100, I wouldn’t want to be without it. But I am a professional chef and use it at work all the time. The only significant ‘downside’ to reverse searing is that it works best with thick steak, like at a 1.5” steak, at least, preferably a 2” one. This would only be a problem if you are only cooking for one person and do not want delicious leftover steak.

Only reason Joe does that is because he can afford to, bet if he were where i am he would be doing the same thing as me. No fancy equipment or tools; just a pan, stove top, salt, pepper, and oil.

Its actually incredibly simple, literally every single step he described was the step in its entirety. He didn’t say a lot, he just articulated the process well. You can actually slow cook any tough cut of beef in a dutch oven and it comes out very well. Directions are as follows: - Set oven to roast 250 - Season and sear your cut of beef - But beef broth into dutch oven - Put in oven for one hour each pound the beef weighs This process can be repeated for pork cuts like the shoulder or butt (same shit) and it also applies when you’re cooking any part of, if not the whole, chicken. Probably also works for turkey. You can also just pan fry your fucking steak and that’s it. Works just fine. Joe just has a process that allows him to get a proper doneness if he were to cook a much thicker cut of steak. Any cut of any animal that is designed for searing (thin chicken cutlet, and beef steak, lamb chops and shoulder, pork chops, etc.) can be prepared with relative ease, even to newer cooks. I’m done now, thank you for attending my TEDtalk. P.S. Red bandana guy doesn’t have a fucking clue what he’s talking about 😆😆
