We do have couple of fish ponds in our land,. So does most of the families in our village. These ponds act as a buffer where excess water from rain goes in. As for the rain water harvest .. It rains here crazy for months. There have been instances when it has rained continuously for a month without stopping. Also there is a network of perennial streams running around the houses. Trying to save the rain water how I have seen being done in South India might end up flooding the areas.

I'm confused about the lai xaak being called "mustard greens" which I have read in several other Assamese recipes and sites too. However the actual leaves of the mustard plant are called xorior xaak.

There are two versions of Mustard greens. The greens that grow out of the actual mustard seeds that we use for everyday cooking, the leaves are smaller in size and the green is a lot more pungent. Maybe Xorior Xaak refers to this one. The one with larger broader leaves which is less pungent is the one that we grow in our gardens and also is available in markets here is the one I have used. I noticed my mom asking for 'Chinese Mustard' seeds from the seed guys. I guess they are different sub-species.

Mustard greens and Lai xaak are both part of the same family Brassika. Therefore, we can use one or either however many ways we want. Also, there are many varieties of Lai xaak that are consumed all over Asia ( Bak sai, Gai sai, etc.) Usually, mustard leaves are a bit pungent and coarse, taste wise, they all have similarities.

Because a lot of people like it being cooked outdoor and outdoor cooking is my channels usp. Also, its a village house where no continuous current supply is there and indoor shooting will require me to set up three point lighting system to make proper videos.
