Cooking time: 180 minutes
INGREDIENTS:
Pearl barley - 2 cups
Beef meat (shoulder) - 700 gr
Varnish - 1 pc.
Carrot - 1 pc.
Tomato paste or ketchup - 1 tbsp.
Butter - 50 gr
Vegetable oil - 30 ml
Laurel leaf - 1pc (optional)
Salt, ground black pepper - to taste.
Cooking:
Prepare all ingredients.
Soak barley for 1 hour, rinse in cold water until clear water. Drain the water.
Rinse the meat, cut into pieces convenient for you. I don't cut big.
Peel onions and carrots. Finely chop the onion. Carrots on straws or on half rings.
Fry carrots in a pan with vegetable oil, add onion and meat to it. Bring to a light ruddy state of the meat.
Put butter on the bottom of the pot, fry onions, carrots and meat, salt, black pepper and tomato sauce or paste, bay leaf. Place pearl barley on top and pour water 1 cm above the level of the barley. Close the pot with a lid.
Send the dish to a cold oven, turning on the heat to 200C until the liquid in the pot boils. Lower the heating temperature to 150C and simmer in the oven for 1.5-2 hours.
