1.5 lbs of white potatoes
3 tsp salt
1/2 tsp ground white pepper
1/2 cup diced red onion
3 large eggs
1/2 cup green olives
3 cans tuna
1 can chickpeas
1/3 cup fresh parsley
1/2 cup olive oil
1/2 cup red wine vinegar
1. Add potatoes to large pot
2. Add water, about 2 inches above potatoes
3. Add 2 tsp salt
4. Add eggs
5. Cover and bring to boil on high
6. Once boiling, reduce to medium high heat for 10 minutes
7. Remove eggs and cook potatoes for another 10 minutes or until tender
8. Once eggs are cool, peel and cut
9. Add potatoes, onion, chickpeas, parsley, tuna, olive oil, vinegar, 1 tsp salt, white pepper to bowl and mix
10. Garnish with eggs, parsley and olives
