We also love soups, and eat it year round, even though we get about 4-5 months with temps from 90-100’s F.

A soup made from carrots and leek made my parents buy an immersion blender, some 25yrs ago 🙂 Another great recipe once was sent to me by a friend. Haven't found it anywhere else. So here we go: using red kuri squash. This one don't need peeling. We can use it all. Clean the exterior. Cut into fairly small chunks. And dont waste the seeds! Clean them, soak 'em in fairly salty water overnight and roast 'em in the oven @ some 200°C to have a snack. Back to our chunks: roughly chop 1/4 to 1/3 of the weight of the squash worth of onions. Sauté those in a bit of veggie oil. Until translucent. (Medium heat) Some salt will help to drive out moisture. Add some yellow-ish curry powder. (I do like the one from our ALDI(north), the one at Walmart is pretty decent. In the UK, you'll surely have amazing options. Whenever I can, I'm using the "mild curry" from The Spice Merchant, Witchita, Kansas.) Just to show that curry some love. Don't burn it! Add a good amout of chicken or veggie broth and the sqash and cook it until soft. Now: drain (and keep) the liquid. Add 0,2 litres (or to-your-liking) of best quality (freshly squeezed?) orange juice to it and use your immersion blender, adding just as much from the liquid to bring this to your desired viscosity to be a soup. At this point, you can freeze the amount you don't need today. The original recipe called for half-whipped heavy cream. Never did that. I served it "as is" on a soup plate, with a dollop of creme fraíche in the middle. And some 4 shrimps per serving, fried in garlic butter. Easy to make. Not realy chichi. But everyone thought I was able to really cook. Haha! Greetings from the far north of Germany!

Thank you so much for showing us how to make your delicious Leek & potato soup... Mine is currently simmering on the hob :) I tweaked it slightly. I only had 1 Leek in the fridge, so chopped & rinsed it thoroughly, chopped a red onion & lots of garlic as I love it! I don't have celery salt, so chopped a stick of celery instead, peeled & chopped 5 potatoes, crumbled in a vegetable stock cube & covered with water, then added more ground black pepper! I'm going to add milk instead of cream too. Hopefully it will be as delicious & divine as it smells! :) 🥔 🌿 😋

Excellent soup recipe, I’ve eaten similar for many years and it’s similar to how my late mother made this and similar soups. When I make similar ‘thick’ soups however I generally substitute courgette/zucchini for potato as the thickening agent as it is lower ‘carb’, this does require some adjustment to the liquid content of stock used, but is otherwise pretty similar. I’ve been following a lower carb diet for 20+ years, although I won’t deny I do indulge in traditional fare like fish’n’chips on occasion, everything in moderation 😉😋.
