We just watched your videos for the first time. They are wonderful, and you are obviously a wonderful cook! We will try your recipes for ourselves. We both think that your videos are not too slow, we want to see everything you are doing as you cook. Your equipment is of such good quality: your knife and your graters, and I had never seen the little tool you use to mince the garlic. Amazing! I enjoy your channel for the music, very good videos and we are wanting to have less to no meat for a variety of reasons. Your videos have a calming effect which is needed in a busy life. Your recipes look delicious! I am definitely making the “pie” one, I had only just finished breakfast and was still drooling over it! 😂 Your videos are not long, they are detailed and thoughtful as they should be. I love the music you choose but I enjoy hearing the crunch of the veg as you slice, dice and chop. It is such a great sound and one of the many reasons I love to cook. I am a big fan of the allium family. Onions are an absolute essential no matter what one is making, except for dessert I suppose lol. Depending on what I am cooking determines which kind of onion I use. But following the recipes you did in this video, with the carrots and mushrooms, I would probably go with shallots if I did not have red onions. I usually use red onions for quick pickling and for salads. Or for making an Indian chutney if I was cooking them. Thanks for sharing and inspiring. Love from Perthshire, Scotland
