Huge respect to the Head Chef here, for treating the rest of the team respectfully. I have no idea how you stay so calm and composed, but can see how regimented the whole process is. Everyone doing what is expected, but being appreciated for it. Not in London again for a while, but will definitely try and get a table when next we are. Thanks for this view of what goes on.

This is yow it is when is not very busy usually. IN the kitchen if you see gordon ramsay behavior that means someone is getting kinda fired, that is only entertaiment not a real thing.

If you are showing emotions, you are loosing control. Your team don’t want head chef who’s loosing control. Being calm and steady with emotions is really important to be in charge.

as someone who's never worked in a restaraunt but has a huge interest in food - this is 10/10 content for me. i could watch this for hours. big ups for being polite and chill and professional in a busy and stressy situation .

I think you are on the ground floor of a new movement where instead of TV shows filming service with high amounts of editing, the chefs themselves do it. It shows your integrity and passion for the food and more importantly, shows the respect you have for your staff as professionals. Especially showing how the head chefs lead from the front. You are in the weeds with everyone and still manage to mentor others and keep things on track. I live in the US but would immediately decide to visit after watching your gopro vids. Keep up the great work!

I love how most of the sounds in that kitchen have an almost ASMR quality to them, then there's the impact printer with that sound that cuts through the heart and soul.

I served 24 years in the Air Force. I love the way you run your kitchen. Reminds me of my military days. You're very organized and your whole team understands their roles and you can see the teamwork. Very cool 👍

I think when you get into a position with the best, you're expected to do your job and do it well under the umbrella of the platoon and Team. At least for me that was the case; the screaming and being treated like shit is for the proving ground, but once you actually need to do the job, hopefully there's no screaming. At least that's my impression (Former Navy)

@@PS2Damon I was a avionics technician from 82' -06' I worked on the SR-71, U-2/TR-1, C-23A, C-141, EC-130E, KC-135Q, T-38, C-5. I retired and went on to work for Lockheed on the C-5 and F-35. LOL now I just screw off

You are the type of chef I’d love to work for. Calm and collected, stern when you need to be, and actually respectful to your cooks. That is how you get a team of people to love you and support you and stay with you throughout your career. I love how you compliment their work as well- sometimes hearing a good job and A “that’s cooked beautifully” etc will make or break my mental during a crazy service. This is lovely to watch.

I got a little sad when I saw the beautiful plating on the dish with the white sauce and drizzle got covered up by the fried greens.. still looked delicious. Thanks for the vids! Never thought I'd love watching a line work on KZbin after getting off of one haha! Love it, great kitchen! Wish I could visit to try it

I worked in a kitchen and I love the calm urgency you present when you need something and need it now, like when you were waiting for the sriracha butter for the cod heads, calmly saying "I'm desperate for it" when the cook was dragging, no yelling no screaming, very nice display

As a chef myself in "The Road Hole Restaurant" in St Andrews I have to say I'm very impressed with how you run your team and kitchen. I also saw you on Sorted foods few month back good too see the kitchen at work. Keep it up man. Respect too all members lead by example I love it.!

Loving these service videos, kind of re-igniting my passion for the industry. Every time I want to get out something sucks me back in. Love how you guys are always tasting, cleaning and slipping the occasional bit of banter in. Hate the noise of the docket machine though, that haunts my nightmares.

I used to work in the restaurant and our head chef was just a d*ck. He was always mad about something and everything we did was just not good enough for him. But seeing a head chefs like you guys makes me wanna get back into gastronomy and work with food again. I could watch this whole day. You find everyone as a crucial member of the team and treat them with respect just like every head chef should do and because of that you got big respect from me ❤.

It still amazes me that there is restaurants that allow you to taste and eat food while you work. I worked in several place here in the US on the line and every place was instant termination if you were found eating, tasting, drink or taking a break. Most days it was 10 to 15 hour shifts -No breaks- No food- No drinks

Nice seeing such a good working atmosphere. I was working in a similar flow restaurant but less than half their staff size and its total chaos specially on weekends. And its 12 hour service so you can imagine.

Watching animated films with my grandchildren, I can't help but think of the movie Ratatouille... where he's being taught the ways of the kitchen and his future girlfriend screams at him... "Keep Your Work Station Clean! The managed chaos is fun to watch.

I would be forever grateful if you found the time to explain how your ticketing system works, i can see diferent tickets go to diferent work stations in adition to the main ones with table numbers on them. Great videos!!! It is amazing to see the work being put together!!

can you explain some of the dishes you are serving or even the condiments that go along with a dish.....more specifically the AMAZING quenells you place on most dishes...... brown .... Appple Ketchup (I think we call that Apple Sauce here in Canada) etc.
