What I appreciate most is that you keep things as clean and organized as you can. I've worked in so many kitchens with so many slobs that just through stuff around all day long. I hate working around clutter or working around huge messes. I'm sure you know what I'm talking about.

Chef you are an absolute machine!!! There is no wasted movement in your workspace whatsoever. I had to do three months mess helper in the Navy. The way you cracked those eggs reminds me of PO Grayson. Once I learned how to crack eggs one handed without breaking the yolk I felt like I had some real skill 😆😆. Your videos make me hungry.

He did a video showing what he does before opening (just getting things fired up, cooking the breakfast sausages, making a batch of gravy)... But I'm pretty sure most of the prep is done the afternoon/night before. I don't know how many other kitchen staff there are throughout the day.

Luv your work ethic and ur videos! I visited USA for 7weeks and hated the food! I found it boring.. Full of so much fat and cheese it made me nauseous! My opinion hasn't changed seeing what you have to cook everyday! I live in Australia where I am proud to say our meat, seafood, produce, restaurants and food vendors are exceptional, thank God! You commented the other day about tomato with an omelette! Cook your tomato and onion into a sauce.. Make a pot of it and add a bit of garlic and basil. Cook your omellete flat and round in a skillet pan, spoon tomato and onion on one side with a little parmesan and fold over one side on the other. Serve with a piece of bacon across top and a sprig of parsley! Try it.. You will love it! We pride on presentation and garnishing a plate of food! That's not done in USA! the food is so much all the same! In Aus we have special boards everyday with items like home made soup and thick toasted sour dough bread! Roasted pumpkin and red onion with spinach leaves and cooked shredded chicken with a balsamic glaze dressing and sprinkled with pine nuts. I serve over 200 meals a day from 8 to 4 and take such pride with every meal I make.. It is made with love.. We sell a lot of poached eggs on sour dough toasted bread topped with a smashed avo and smoked salmon..for brekky. We have a set menu of 20 items but have extras every day for variety. I thought you might like to know how we eat down under! Our food here is very savvy and very popular around the world!!! Love your work and videos! ♥️ ♥️ ♥️

Love watching your videos. You work so fast and keep a clean work area . Impressive. Quick question. Why do you use so much grease/melted butter? A whole ladle of grease for just a few eggs! Half a ladle of grease poured over a few onions and peppers (from a different video).

I think you should get a food truck you would be successful, you just need to believe in your self and take the plunge, when I was 25 I owed 1.5 million on equipment and now 45 years later I owe nothing. So you can do it you have the skills.
