Pro tip: don't try to flop (yes, flop) it like a flap-jack. Use your wrist, and a light touch. Also, DO NOT try to "flip", you will fail every time. Think more like sliding it out the front of the pan, then drawing it back to you.

FYI - corned beef is brisket that is salt brined for several days. You see it in Irish dishes and is sometimes served with cabbage. You are amazing in the kitchen. 🎉 Thank you for the insight as to how the process works. 😊

Oh man, this brings back memories but I don't miss being a line cook! I worked for a very busy brunch restaurant for a couple years. Working line in the mornings was a whole other level. 500 tables easy, in and out the door. I worked the evening shift and preferred the pace much more. Still had to move your ass but it didn't require slinging eggs and pancakes over 9 burners simultaneously :D Huge props to you for keeping a cool head, being polite and staying very organized. Also, no surprise you've got your own egg pans locked away. I've worked with too many dimwits who used metal on egg pans, ruining them and making it a huge pain in the ass to cook eggs.

I used to work dietary cooking for the patients. Its the same, but different. It was one other person helping with lunch and 2 ppl for dinner. We premade the burger and soak with in beef broth. The condiments part was another person job. Like the lettuces, tomatoes, pickle. Onion stuff. You are truly a good cook!!!
