Cocinero you remind me of Oscar Wright the best short order cook I ever saw. I was a young kid starting out in the food business. All I did was stand next to him and make buttered toast for every order. All the eggs were done on the grill fried, over easy , scrambled,omelettes, this was before they invented nonstick pans. He kept 6 waitresses busy in a 70 seat hotel cafe so busy they could barely keep up with him. We were behind the counter so you could sit there and watch the magician at work. All I would hear in a quiet voice was “ two toasts… two toasts… one English “ all morning long. The when he had a break he would walk to the end of the counter and have a cigarette (back in the day). Then wash his hands before getting back to it. I thought he made over easy eggs on the grill backwards. He cracked the eggs on the grill and before they set, he would flip them over to finish on the other side then he just had plate them. He had his personal thin steel spatula that nobody was allowed to use. He used to hone the edge with the knife steel and it had a curve in the side that would make it easier to flip the eggs. I was in awe. This guy inspired me to go on to a 20 year culinary career. From buttered toast to head chef. Thank you Oscar.

My secret question is, when are you going to go in and get something done about your back problems? I can hear you do the pain grunt when you're reaching up to your right. And I heard you say yesterday on one of the feeds that I was watching that you can go faster but because you're wearing the GoPro you actually go slower so you don't make people feel sick while you're turning your head faster. I also have never seen food get returned to you that you made a mistake..... To me that is incredible with as fast as you have to work that everything goes out the way that it should be and not overcooked or have a mistake on the plate.

Yeah don't put oil on top of the French toast once you drop them The grill is fine. That's excessive. But you are doing a great job, you know everything is and how to make all the meals. And you're clean 👍✨🥳
