Due to the size of the GPUs we prefer to install it there to make sure it's all in working order

That's a good way to end up with a broken PCIE on the gpu and/or broken motherboard. When gpus were the size of a phone it wasn't a big deal but now gpus are the size of a small dog.

For someone who I would assume has a pretty high budget I'd be curious to know why not Gen5 NVMe and why not 2 more 16GB RAM sticks?

The build has 64gb of ram. You do not want to pass 64gb of DDR5 running 6400mhz cl32. Also gen5 NVMe is having issues. We do not use product for creators that are not stable. We have been building PCs since 1999 so don’t worry we make sure our clients/creators get PCs that perform and have stability.
