I think most real knife attacks would be with a lower swing or sudden jab to the lower abdomen /crotch area (which have vital arteries), because the attacker would pull the knife from his pocket and hold in his hind hand . This demonstration (horror-movie-style knife holding) does not depict a real life stabbing case. The vest should be longer in the front to cover lower belly and crotch area.

Majority of body armour is just for the upper thorax to protect the vital organs. Yes most will probably be around the navel but consider what you have to do in body armour. I wear a vest and need full mobility in my work. It's protect vs functionality.

A lot of knife wounds from coroner's reports report exactly this. Hollywood loves to present the serial-killer style icepick grip or people squaring up for a good ol' knife vs knife duel because of it's clarity to the audience and dramatic flair. But in reality, knives are ambush weapons to be used on an unprepared victim. Concealment and sleight of hand until the last minute is the be-all-end-all of knife tactics in the real world. Which means by the time you comprehend that someone suddenly drew a knife on you and stabbed you, it's basically too late. Gangers are especially fond of shanking you in the crotch/abdomen region because it's easy to catch someone off guard, and is an artery/vein-rich region that is not easily compressed or tourniquet-compatible, so the victim will bleed out more likely than not. Also, nobody stops at just one or two stabs. An assailant flailing away with 6-18 stabs/slashes (or more) before darting off is pretty commonplace.

Wonder if this vest protects against those special knives that are said can go through Kevlar? Edit: Special titanium needles have also been claimed to go through a knife vest. That said I've been taught to never stab where the person might have protection. Always go for the armpits, throat and on each side of the genitalia (the big leg veins). The first strike is vitally important to get right. After that, "go nuts and have fun" (that's my instructor's words).
