What temperature is your buttercream at since it's not "wilting" or drooping as you pick up more and more buttercream? If I make my buttercream soft peaks, it collapses over itself as im picking up more, and if i make it a harder consistency, then it doesnt collapse but then the petals arent as smooth and soft..

Hi Maddie, Thanks for your videos! I've been enjoying them. I am curious - you've mentioned in a couple videos that its a challenge to place the petals on the side of the cake. Have you tried "assembling" the flowers on parchment, freezing, and placing them on the cake that way? Is there a particular reason that wouldn't yield a desired result? I can see how maybe they would freeze with a flat back and wouldn't lie flush on the cake, but I was just curious if this is something you have tried. Thanks again!

I haven't really tried that method - particularly because the teachers I learned from advised me not to do that! If you want to give it a try though, you can :)
