It's so easy to do. Thanks for sharing. One time/ thing happen...i forgot to slice it the next day. By the time i remember, the paste is crack. Is there any remedy? Please advise. Thanks.

I don't think you can reshape it. Go ahead to slice and hope there are not many broken pieces.

The cracker will expand many times of its size during deep-frying, far beyond the power of expansion by the baking powder. I think that is not really necessary.

Can arrowroot starch be used along with tapioca starch to make make the dough. Also can the log be kept in freezer after it has cooled, can the chips be frozen. Would freezing log and chips have adverse on the end product? Thank you

Not sure about arrowroot starch. It will become very hard after freezing and difficult to slice. The better way is the slice first, then air dry. You can keep the dried, raw pieces in an airtight container for a few months. The result is still good.

Mine, The middle portion of the dough is always uncooked when cut . I steam more than an hour and the dough i make is smaller than yours. Please help 😢😢😢.

It is harmless if you steam it longer to ensure it is fully cooked. The uncooked portion of the crackers will not expand fully during deep-frying. Try using a bigger flame to steam and hope it is all well.

I have tried to make crackers before (a different recipe) and they boiled the dough; rather than steaming. I have boiled the dough for up to 50 minutes and still end up with dough that is uncooked in the middle. Have no idea what I am doing wrong.

I got problem with the 2nd batch it did not puff very hard I did not know why Now I made the 3rd batch will slice tomorrow n dry them. Hope they will be puffed😢
