@@jackkristinep other starch like cornstarch and potato starch can be used in this recipe but tapioca is the best because it makes your shrimp cracker puff up bigger and more crunchy.

This is the BEST Chinese cooking channel on KZbin...hands down. The way you take the time to explain each and every step, and the science behind what you are doing is just amazing. Not to mention, that when you give the Chinese names for things you pronounce them clearly and slowly for us English speakers. Too many Asian cooking channels don't give the proper names in a manner that we can actually hear as primary English speakers. It's extremely helpful to know what they are called and the proper pronunciation so that when we go to the Asian markets to get these ingredients....we can actually relay to the workers there what we are looking for. You're so thoughtful with all of the information you provide for us, and I absolutely love watching your videos for this reason. Keep it up...you are awesome!

Years ago when we first moved to California, we went to a Vietnamese restaurant. My very first and way different than they are now. They had a lemon beef salad with a sweet dressing, and shrimp crackers on the side. You used the crackers to scoop up the salad. I thought it was divine! I've since wanted to copy it. And that was from the 80s! I will tuck this little recipe away for my experiments. Thank you for sharing!

My Indonesian-Dutch grandmother would make krupuk regularly. She would limit us to 5-6 crackers each! Now I always serve them when I make lumpia with rice and peanut sauce. I've always wondered how they were made...can't wait to try this recipe.

I ended up ordering a bag online to try them and fell in love 😁 Liziqi's video was in chinese so I tried finding other videos to show how they're made...but no other video gave measurements or cooking times or real direction so I've been buying them on-line (they're a bit expensive) I'm glad to finally see a video that teaches me how to make my own. You find the most delicious foods in China, Korea, and Japan ☺️❤️

@@lovemesomeslippers You can find different brands of shrimp crackers on Amazon. Their listed as "Shrimp Chips" they have the pre-packaged already made and the kind you fry yourself 🙂 I've found all kinds of Chinese and Korean foods...even moon cakes... they can just be expensive....

@@lovemesomeslippers go to your local Asian, Chinese, Korean or Japanese specialty stores.. Where I live, we have a lot of mom and pop stores, KP International Market and SF Market which has 15 locations nation wide.. I live in Sacramento, CA 5 miles from my home are 3 Chinese owned and ran mom and pop stores. If I want something I ask them and they will either find it or order items for me .

This is awesome! My family has made shrimp cracker 'chips' (called Krupuk...sounds like kroo-pook) for special occasions but have always bought them at the asian store. I had no idea that I could make them from scratch. It's a lot of work but looks like it is totally worth the effort. I don't know how many times I've made these from store-bought and they just taste a little old/stale. Thanks for this great recipe!

It really is worth the effort. I was using a different recipe, which has different ratios / spices and called for steaming instead of boiling, they came out really good. Interestingly my version puffed up even in the air fryer, but to my dismay, I couldn't get store bought ones to puff up in the airfryer.

I had these at a Dutch Family's party when I was a kid...they had them because they lived in Singapore for a while because Dad's job sent him there, then they moved to California back in the early 70's, and they were in California because of Dad's job again and that's were I tried them.

Thank you for explaining this. I first saw the raw uncooked cracker when I had to fix an industrial fryer that cooks the pellets. I couldn't believe that prawn crackers started life as a 'piece of plastic'. Since then I have always wanted to know how to make them.

Another excellent Recipe Mandy however they do take a long time to make, BUT they're worth it !!! You can also slice them on (a very good - Probably French lol) Mandolin but you do need to oil the blade (a cheap Canola oil from a squeeze bottle works well, but use ONLY a tiny bit of oil each time). I've been making these for Aeons, and they're SO much better than shop bought ones. I really like your addition of Fish sauce, so Ive replaced the Anchovy paste I generally use with the your fish sauce idea. GoodOnYa

Fabulous. Thankyou so much for this recipe. I love your channel and your cookware. I’m Australian and will do this tomorrow. I think I have the correct flour. I live in a very small town in Central Victoria, but I keep an enormous pantry so that I can cook as I desire. This is going to be so much fun. I actually don’t have a dehydrator yet but it is very hot here at the moment and if I’m very careful with a fan and a thermometer I think I can make this work. After all, dehydrators are fairly recent inventions. I will be very careful.

@@SoupedUpRecipes well it is extremely hot and dry here where I am in Australia at the moment. Anything left in the sun for 10 minutes is desiccated. Hang out the washing, dry in 20 minutes. Towels 15 minutes 😂

@@SoupedUpRecipes in Australia tapioca flour is called “Arrowroot”. It might seem very strange to you but children in the 50s and 60s were allowed to eat milk arrowroot biscuits (cookies) because I think they were mild and not likely to upset their tummy (stomach). I always forget that the name is different here. I must post a reminder around my kitchen.
