INGREDIENTS :
750 g Fresh prawns
Marination: ¼ tsp turmeric powder, salt, and 1 tbsp lime juice
5-6 tbsp ghee
8-10 dry red chilies (soaked 15 minutes)
5-6 cashew nuts (soaked 15 minutes)
For the Masala Paste:-
Dry Roast :
1¼ tbsp coriander seeds
1 tsp cumin seeds
¼ tsp mustard seeds
¼ tsp fenugreek seed
¾ tsp fennel seeds
¼ tsp methi seeds
½ tsp pepper-corns
3 cloves
4-5 garlic cloves (small)
1 small ginger piece
few fresh curry leaves
Other Ingredients :
Few fresh curry leaves
1 tbsp. kasoori methi
¼ tsp garam masala
METHOD :
Clean the prawns. De-shell & devein it. Rinse it with water & set it aside.
Add prawns, turmeric powder, salt, and lemon juice in a mixing bowl. Marinate it for a minimum of 15-30 minutes. Set it aside.
Soak 8-10 dry chiles and 5-6 cashew nuts in hot water for 15 minutes. Dry roast coriander, mustard, fennel, cumin, peppercorns, and fenugreek seeds. Roast on low heat until aromatic. Transfer it to a plate. Transfer the roasted ingredients to a mixer jar. Add garlic, a few curry leaves & water. Grind to a fine paste. Set it aside.
Heat 3 tbsp of ghee over medium heat. Add the marinated prawns & cook it. When the prawn starts to cook it will release water, preserve the water released from the prawns in a separate bowl. when you see the prawns start to curl up remove it on a plate and keep aside.
Add 3 tbsp ghee in the same pan and add the prepared ghee roast masala and the liquid preserved while cooking the prawns. Add salt and mix well.
Cover & cook until the masala starts to leave ghee from the sides. Stir it in between to avoid masala sticking to the bottom of the pan. Now add in the prawns, mix it with the masala & cover and cook it for 5-7 minutes over low heat.
Once done (prawns cooked) add 1 tbsp lime juice, and 1 tbsp kasoori methi and mix well.
Serve hot and enjoy!
