Scientists later determined that they actually weren't semi-aquatic by looking at their bone structure. But that's not to say they wouldn't jump into a pond to cool off for a minute. Given how hot the climate was, this scene is still very accurate.

More accurately, toxodons were notoungulates which was a sister group to perissodactyls, the group that rhinos, horses and tapirs are part of

Yes but they weren't about to die out at the time. So bringing them back would be a no go without blowing time up. (The Titanosaurs were about to all be engulfed in lava, so they got exempt from that rule.)
