This is a really good project to shed light on some of the hidden gems of Filipino cuisine. The Philippines will soon be on par with Thailand as the most visited country on EARTH, with many of the visitors flying in with Philippine Airlines. What better way to introduce them to some of the dishes that they should explore in the country once they land. As a Filipino American, I always enjoyed food that I had at cookouts but my mind was blown away once I went to Cebu and some of the best Filipino food I've had in my life. Normally, I love Thai and Malaysian curries, Trini doubles and roti, Jamaican jerk chicken, Sri Lankan karis and sambols etc - basically savory tropical curries with some carb on the side. The first time I went to Cebu specifically and has the local dishes there, it reminded of this savory type of food and for the first time I truly felt Filipino food had the potential to reach that level of quality and flavor like the other countries I mentioned. Particularly the sweet marinade on the Filipino BBQ, kari kari, sigsig with coconut milk and rice etc - the rich, savory, sweet Filipino food that can blow your tastebuds away.

the best salad i ever tasted was eggplant salad with salted egg sauce. one of the best. via PAL. i can taste it until now. even though that was 5 years ago.

Hola Chef JP. This episode is timely for a suggestion. Maybe you can suggest to the PAL Admin of the lounge to inform the diners to use another new plate of bowl when they go for another serving. Chef JP I suggest you check out Wok Inn beside Malate Church. Mura lang dun. Avoid lunchtime kasi warzone dun but I'm surprised kasi kahit maraming tao mabilis ang serving ng food. It would be interesting to see the kitchen on your perspective. They don't have menu, punta ka sa harap and choose ano papaluto mo at anung klaseng luto. Also, their "Sipa" is a MUST try!!!
