If you really want to try the best French cheese, you should go to a "fromager" instead of the supermarket (shops that sell only cheese). If cheese from supermarket can be ok, those dedicated shops often take it to the next level.

I am glad for you Philip. I would say that NOTHING matches the quality of French pastries in the UK. If you love cakes and pastries I recommend you to visit Sicily for its superb cannoli and Vienna for everything sweet. PS: Forget about the overrated "Sacher torte", there are much nicer cakes in Vienna!

As a Parisian myself I got pleasure in just watching everyone in the video appreciating the various sweel/salty specialities. I even got a couple of new places to experience. What I may add to the comments is the following. About what you show as CREPE. Of course you find this a bit everywhere as street food because quick to prepare… but… a CREPE (made with wheat flour) is generally stuffed with something sweet (honey, jam, freshly melt chocolate, etc) unlike GALETTE which is prepared with buckwheat flour (top for gluten free people) which are indeed stuffed with salty ingredients (endless list: ham, grated cheese, mushrooms, onions, andouille, egg, braised leaks with bacon and bechamel…) To appreciate these differences, nothing best than having a dinner by a Creperie where they served galettes as main dish and crêpes as dessert. One word now about what you call APERO. Although the cheese you had might be found in some families, apero is more often made with wines and aperitives like pastis, port, aperol spritz, than are usually accompanied by a large selection of mini snacks that preceed the dinner: salted or spicely coated peanuts/almonds/cajus…, various crisps, black/white olives, various types and sizes of saucissons, bites of pâtés/terrines spread on Parisian crispy baguette, guacamole with tortilla chips, etc. Etc. Thank you for your videos :-)

Don't know if this was direct or just convergent evolution from croissant but you'll find croissants au jambon (ham croissant, with cheese and often béchamel) in all good boulangeries here in France.

If you're going to France and are going to eat croissants, you have to get the ones that are made with only butter as the fat. Every decent croissant or pâtisserie in France will be "pur beurre" so many do not actually state this (some may have signs stating this). This is a major difference between French pâtisserie and industrialized US pastry that fills the shelves of Costco and discount grocery stores. The cheaper US stuff uses hydrogenated soybean, palm or other oils. French croissants look and taste wonderful because real butter browns beautifully and is a natural emulsification of water and fat, which gives just the right conditions to create a flaky dough. The flour in France is also better quality and contains its natural yeasts, which is why you can get wonderful baguette with little or no additives, as it often has been at least partially hand-kneaded and proofed. This is actually rare to find in USA. Outside of the large cities there are great boulangeries and pâtisseries that offer great stuff shown here.

I've been to France countless times and I don't think I've ever had a (fresh) croissant without real french butter lol? That's exclusively a non-european thing as far as I'm aware.

I was watching another French KZbinr’s video on the best croissants in France and he actually said that unfortunately a majority of the croissants in at least Paris are made in factories not by hand, with pure butter as the fat. So you really have to find any real French bakery that has made by hand croissants.
@bengt_axle
@bengt_axle 23 күн бұрын
@@tiamarrow6366 The lamination (interleaving of butter and dough) is always done by machine -- even when they are rolled by hand. This allows large tiles of butter to be used in a machine that does the work of rolling repeatedly, without heating up the dough and melting the butter. If you'd like to learn more, @KrisKazlauskaite is a professional baker and has an entire channel devoted to croissant and patisserie! I believe, according to French consumer law, a boulangerie is a place where the dough is made on the premises (and then baked), while a "fournil" can be a place where dough manufactured off-site, is just baked and sold fresh.

Been to France a few times. HOW DO THEY STAY SO THIN! Once I sat next to a slim frenchwoman, I was eating alone, so was she, and she looked like she ordered the truck driver special of the day--and polished it off. Tiny lady. And there are all these "snack" times in between! American food must be loaded with junk.

I was very surprised, but I think I saw a Canadian cheese in there. Quebec makes a lot of nice craft cheeses, but I am surprised France would want to import pasteurized cheese. I remember having a conversation with a French man who said pasteurization ruined the flavour. I was surprised the sandwich you bought had only meat and butter without any toppings like veggies. The best fries I've had in my life were in France.
