Okay so I made this today. Funnily enough, I have the same bundt pan. I only had two oranges on hand. I didn't have quite enough OJ from my two oranges so I used 1/2 lemon juice and a bit more Olive Oil. I added 1/4 tsp of vanilla to the batter. I used the zest from both oranges and the lemon. I cut the pecans down by a 1/4 cup. With these minor adjustments it came out really really really tasty. yumyumyum. I'm bringing what's left to brunch. I think it's perfect with coffee and breakfast.

If you don't have enough orange juice, add water or milk to make up for it. Adding all that oil is very fattening.

So I just made the OG version of this recipe which is what John has linked in the description (it’s an 8” round, lemon instead of orange, no cranberries, no pecans, and instead of glaze, you sprinkle sugar before popping into the oven) and… IT WAS AMAZING I’ve tried a few of John’s recipes and always get great feedback but I was told this was the best thing I’ve ever made! I’ll definitely be making more (like this weekend) and I’ll definitely try the bunt cake version around the holidays.

I made this cake for Christmas. I used regular virgin olive oil since Spanish olive oil isn’t sold where I live and I also left out the nuts. The cake tasted delicious still. I used orange flavor cranberries which took the cake to another level.

I had never heard of your show until just recently. I am 57 yrs old and I have always loved to bake. I absolutely love the fact that you don't waste!! So many baking shows over the years, I would just cringe when I saw them leave a lot of batter in the bowls. It really irritated me. Haha. Anyway, keep up the good work.

I love olive oil cakes. I think they are so "adult-like" and not overly sweet. I make a similar citrus cake, but it uses yellow cornmeal and Amaretto. When I make your cake, I think I will add a few splashes of Amaretto. Here's a tip when spraying cake pans: Spray the pan inside the dishwasher! The errant spray will be confined and the dishwasher does the clean up for you. Just make sure it is an empty dishwasher or one that has dirty dishes. I love your channel. Thank you for sharing your talents and blessings with us. Merry Christmas to you and your family --- and that includes your Mom, Rita!

I bought a bottle of Olive Oil the other day because it was half price and I decided to taste it by itself, which I never did before. It was quite bitter! Don;t know if its just this brand or what, but you would need more sugar to compensate in a cake recipe, I would think.
@lolaottinger69763 жыл бұрын
I’m so happy to see your tip about spraying baking oil in the dishwasher. I was pretty shocked a few months ago to see two smallish spots on a chair in my living room, also spots on a glass table, they had to have been caused by the baking oil spray. I will definitely use this tip from now on. Thank you for sharing.

Made this for a X’mas dinner party and it was amazing! I made the glaze too liquidy….lessons learned. But still tast very good! I have brought home some left over slices and boy they were even better the next day!!! I thought of making some sort of compote to go with it rather than ice cream. Maybe some cranberry compote with bits of oranges? Thank you John!

This looks great!!! I love the tip about getting the batter it for good crisp corners. I have the same pan and struggled with it. Now I'll break it out to make this cake! One suggestion for the glaze, if you use a bit of heavy whipping cream (or even a tbsp of softened cream cheese), it'll keep the glaze soft instead of getting hard, and you can ice it while it's still pretty warm. (The warmer it is, the more glaze will soak in)

I can't wait to try this recipe - my mother's birthday is close to Thanksgiving and since this recipe incorporates cake, pecans, and cranberries, it will be perfect. I'll of course practice before the big day. I love your bundt cake pan so much that I found it and purchased it. I just love how the icing drizzles dramatically down the sides compared to my older, now a bit boring pan. Thank you for your videos!

Love that Heritage pan, it really makes a unique bundt cake. I actually made some cranberry orange bread with pecans this year. Such a great flavor and I bet the EVOO makes it very good!
