Made this cake today. I didn't use pecans since I didn't have any. Didn't have crushed pineapple either so I used fruit cocktail in light syrup instead. What a cake. Absolutely scrumptious. Light and moist inside. Thank you!

I use marshmallows too…..I make my own brown sugar (so easy) and it’s always, always super soft with no lumps 👍🏻

Hummingbird cake has been my number one bake over the years.of pastry chef .Only one item l changed was adding a 20oz can of crushed pineapple with cream cheese frosting. Happy baking!!!

I love that cake. I took the idea and added coconut and layered shaved chocolate in the middle of the cake layers. I called it a tropical dream cake. It's so good. But how could it not be. I used yogurt in it as a milk product to add what yogurt adds 😁 which is a tender crumb. I'm a cookie and ice cream girl but this cake and a few others are to die for.

This is perfect for an Easter dessert. Love this cake. I am also making a yam pie instead of using pumpkin. It uses so less sugar due to their sweetness. Same spices and other ingredients as you would for pumpkin pie.

This was my mom’s favorite cake. She passed in 2018….I found the recipe she’d had a year later. It’s the same as your recipe. I’ve made it several times. There was a few times I over mixed it and it didn’t come out quite right. Now I know what went wrong. I'm Jamaican and yes, we do call humming birds, Doctor birds as well. I make this cake and a carrots cake every year at Easter, I just make it in two layers and reduce the cream cheese frosting, it's amazing.

I have been searching for the Doctor Bird Cake my mom used to make for years. Watching your video, I thought this sounds just like it. Then you mentioned it's also called Doctor bird. The only thing different is mom used to put a few chopped maraschino cherries in the cake. She may have made it in a Bundt pan and poured a glaze over top. Either way I'm very excited To have this recipe. Thank you

John, you should try freezing your bananas. Keep the peel on. Freeze for a few months, thaw and squeeze out the fruit and as much juice as you can. The juice is almost like liquor. I do that for all my banana breads.
