Amazing Strawberry Lemonade Cake Recipe

I just wanted to let you know that my ten-year-old son and I made this cake this week for my wife's birthday and it was such a success! Well, actually we had to make a modification because our grocery store was out of strawberries, so we made a raspberry lemonade cake, but everything else was exactly the same. This was the first time we had ever made a cake completely from scratch - no boxed cake mix, pre-made frosting, or artificial flavors. My wife says it's the best cake she's ever had. Thanks so much!

Ingredients For the Strawberry Reduction: ▢ 3 cups chopped fresh strawberries (500g) ▢ ½ cup granulated sugar (100g) ▢ ¼ cup lemon juice (about 2 lemons) For the Cake: ▢ 3 cups all-purpose flour (360g) ▢ 2 teaspoons baking powder ▢ ½ teaspoon baking soda ▢ ½ teaspoon salt ▢ 1 cup unsalted butter room temperature (227g) ▢ 2 cups granulated sugar (400g) ▢ 2 tablespoons lemon zest (about 2 lemons) ▢ 2 teaspoons vanilla extract ▢ 4 large eggs ▢ 1 cup whole milk room temperature (240ml) ▢ ¼ cup lemon juice (about 2 lemons) For the Buttercream: ▢ 2 cups unsalted butter room temperature (454g) ▢ 8 cups powdered sugar (about 2 pounds/ 900g) 6 tablespoons strawberry reduction (80ml) ▢ 2 tablespoons lemon juice ▢ 2 to 3 tablespoons heavy cream 3 8inch cake pans Oven at 350f Bake for 40 to 45 min

You don't need to add both baking soda AND baking powder. That acid reaction dried up the cake. Makes huge holes and yes it rises a bit more but it's awful. Dry dry dry.

❤ gotta say, Mary Berry would say add a decorative dusting of fresh lemon zest on top of the strawberries to finish the look and give the visual cue that there is lemon flavor. Nom nom nom.

4 months late, but the best cake I ever had was from an elderly japanese woman at a mushroom foraging club. It was an incredibly rich and milky earl gray lavender cake (tasted like it had sweetened condensed milk in it) with an incredibly creamy, almost lemon curd or custard like lemony exterior. It tasted absolutely amazing. Like cream and lemon in earl gray lavender tea - but in the form of a cake with interesting textural qualities. It absolutely blew my mind, and I've tried / retried 3 or 4 times to make it.

Thank you so much for offering Swiss or Italian meringue buttercream as an alternative! We hate American buttercream in my family. When I first discovered Swiss meringue buttercream only a few years ago, my husband was amazed and thrilled. I never made American buttercream before but it was such a pleasant surprise to discover that buttercream came in varieties that were not cloyinging sweet and one dimensional in flavor.

Just made it for my girlfriend's birthday, no modifications to the recipe except for halving everything! I'm not a good cake decorator and I don't have the proper tools but the strawberries on top carried the aesthetics of it! It looks beautiful!

Thanks for sharing all your delicious recipes. I made this cake it was good but for my family the buttercream was way too sweet. So if you dont like too sweet use only 4 cups of sugar or try the swiss meringue like John mentioned on this video

Better yet sub 1-2 sticks of butter for 8-16 oz of cream cheese. Smooth the cheese with a mixer and add it in last, after the sugar and flavor has been well mixed in the butter. Otherwise the frosting will lose some structure

Visited my sister last fall & used a micro-plane first time ever. It was awesome how it made grating so much easier. I studied the way it was made & carefully ordered a less expensive version online... I use it ALL the time! 😍 I would make your recipe in a loaf with glaze instead of frosting, because I live alone and a whole cake is too much for me... but it looks yummy! Today I am making lemon zuchinni bread to use up zukes from my garden... because, ANYTHING LEMON! 😋

We made this last night and it was delicious! The helpful baking tips were awesome. We halved the recipe and made just a two tier cake. We used a 9x13 pan and cut bake to 25 mins. I imagine a 7 X 11 pan would have been ideal, but delicious none the less!

1:00 - I don't think it typically matters for the microwave to be power-reduced if you're only going for a short 10-second burst. You can hear the magnetron remain on regardless of whether the setting is at 100% or at 50%. At least with every microwave I've ever used.

I baked this cake for my daughter’s birthday last week, it was AMAzing!💞 wish I can share the photos here. The only thing which I modified was the amount of powdered sugar, I used 1 and a half cup only for the frosting, and added cream cheese for a twist, that was the perfect amount of sugar.
