This my go-to recipe! I usually make it as a full cornbread instead of muffins in a square pan. Takes about 22 minutes in my oven. Delightful!

Just wanted to say I just made them and added half brown butter - half melted butter (which I had no idea what brown butter is until you mentioned it, then I looked it up and made it) and it was amazing! Every bite is flavorful! Kids loved them. Thank you so much, greetings from Greece 🇬🇷❤️

Yes. I mix everything together and let sit on counter for 1 to 3 hours….or overnight….then in fridge. Old ladies taught me that. It helps it all to meld together….and utilize its moisture overall. It is worth ALL the effort and wait!!! Ahn 😀

I had to laugh when you added the sugar, it brought a favorite memory. My dad was from the deep south and I guess they didn’t add sugar to their cornbread, and my mom, who was raised in the west, did, so when my mom made cornbread, he would tell my mom, that’s not cornbread, that’s cake. lol

Raphael, I put a tablespoon of sugar in my cornbread, at most 1 /4 cup. For contrast, like you might put a bit of salt in a sweet dessert. Like the OP’s dad, I’m from the (mid) South and we think of cornbread as more of a savory treat. Put jalapeños in the cornbread as a great accompaniment to chili. Use it in stuffing with celery, onion and savory spices.

Can't wait to make these tonight. I love the honey butter idea, a switch-up to that is maple butter. Maple syrup is loved here in Canada, so subbing would b pretty simple, adjust for consistency. I would also add bacon bits to the muffins. Thank you for this presentation

I always let my batter sit for about 5 minutes after mixing. That ensures the flours are thoroughly hydrated. The batter is a whole different consistency when you do this.

Melt your butter using the defrost function on your microwave. It takes a little longer but there are no explosions.

Used a Jiffy cornmeal muffin package then searched for a recipe and forgot about John! Silly me, two types of recipes and the second (that I didn't forget the flour in) is bland-it has more flour than cornmeal! So now I know I will have a delicious recipe. Oh, and I'm baking them in a fifth wheel's propane oven, they don't brown on top but the sides and bottoms look great!

Longer time. Tempt shouldn't change I don't think. Give it maybe 10mins more and check every few mins after that. Toothpicks/wooden skewers are your friends here.
