Recipe: Ingredients ▢ 2 cups all-purpose flour (240g) ▢ ⅓ cup granulated sugar plus more for sprinkling (66g) ▢ 2 teaspoons baking powder ▢ ½ teaspoon salt ▢ ½ cup cold unsalted butter cubed (113g) ▢ 1 cup fresh or frozen blueberries (6oz / 170g) ▢ zest of 1 lemon ▢ ¾ cup heavy cream (180mL) ▢ 1 large egg Instructions In a large bowl, whisk together flour, sugar, baking powder, and salt. Add butter and work into the flour mixture with a pastry blender or by pressing the pieces between your fingers until they are about the size of peas. Stir in the blueberries and lemon zest. In a small bowl, whisk together the cream and egg. Pour over the flour mixture. Mix together with your hands or a silicone spatula just until the mixture is mostly moistened (it should still be a little crumbly). Turn out the dough onto a lightly floured surface. Knead it gently a few times to shape it into a ball. Press the dough into an 8-inch circle. Cut into 8 wedges. Place wedges on a small parchment or silicone-lined baking sheet and freeze for 20 minutes. Meanwhile, preheat the oven to 400F. Transfer scones to a large baking sheet, placing them about 2 inches apart. Brush lightly with more cream and sprinkle with sugar. Bake for 20 to 25 minutes or until the tops are lightly browned and the bottom edges are golden. Let cool for at least 10 minutes before serving.

I just made these this afternoon. Used my new scale (yes I listened to you, John ) to measure the flour. I followed your directions meticulously and made the BEST scones ever! I have made a lot of scones in the past 4 years when I broke out of my baking comfort zone and these win the blue ribbon among all my other recipes! Thank you!

I've made these before. Great recipe. Did it my first time making scones. My son said you need to sell these to Starbucks. Lol. They were a hit. The lemon 🍋 and blueberry is a great combo.

Cranberry orange are my favorite. I’m not particularly fond of blueberries so I can appreciate changing this to a cranberry orange recipe.

Thanks John, love the lemon sugar step! Unfortunately I once worked somewhere they literally forced us to knead the scone dough!! (And use high protein flour with high hydration) I could not believe it. They turned out dry and overbaked on the outside with a bready/doughy center, and I was ashamed to participate in making people think that's what scones are like. But now that I don't work there anymore and have recovered a bit from that trauma (ha) I can again enjoy making flaky buttery scones such as these.

Thanks so much john! I made these today and i can confirm that they were really tender and delicious. I had to use frozen blueberries because its hard to get fresh blueberries in my country because they’re counted as exotic fruit so its expensive and of poor quality. But there are some things i want to share: first whatever brand of frozen blueberries you’re using make sure they’re whole and not smushed because when you add it to the batter it becomes really wet and blueberry juices will leak everywhere and that’s what happened to me so to fix this i shaped it into triangles just like john and put them in the freezer overnight before baking (not 20 minutes) and they tuned out great even though the batter was a little wet. I also used whipping cream instead of heavy cream because it was hard to find so if you’re having the same problem and are wondering if whipping cream is fine it is. Last i brushed another layer of cream on the scones after it came out of the oven and it made them so shiny and beautiful. Remember im a beginner baker and this recipe worked for me so im sure it will work for you too the important thing is to not give up and to keep trying :) good luck I’ll answer any questions you have asap

I have made several recipes with frozen berries…I can always find fresh ones but I buy berries for smoothies so why not use them for baked goods? The trick to frozen berries is only add them at the end, frozen so when they bake they don’t explode and make a watery mess.

@@marinazagrai1623 Question for you if you don’t mind- you and the video says to add frozen berries at the end so they don’t run, yet you would think adding fresh berries at the beginning would run even MORE…I’m confused. One would think to add FRESH berries at the end so they don’t run…? Thanks for any feedback.

What an absolutely delightful video. I learned why my previous attempts at blueberry scones failed. You explained every step so well. I wouldn’t even have to be watching the video to understand what you’re doing. And John you ROCK, you have a sprinkle drawer. Awesome!

I made these with dried cranberries and orange zest and used King Arthur's Measure for Measure gluten free flour. So yummy!! I also cut them into 12 instead of 8 so they would go further.🥰

This is such a great recipe! I use fresh milled soft wheat flour and it adds a depth of flavor. Didnt need more sugar! They are excellent! Thank you for sharing this recipe!

Great recipe, easy to follow. Made 8 scone batch, turned out like John's. My wife and I ate all 8 in one day. Made a second batch the following day. These are dangerously delicious and very simple to make.

....Being Irish ( and English) I adore Scones... my favourite is the Cranberry-Orange , I did not ever use a food processor for my Scones. I have also used Bread Flour ,which is what my Grandmother taught me, and using Bread Flour for certain types of cookies gives amazing results.... especially Chocolate Chip Cookies.

So i am not going to lie. I have never made a scone but i have always wanted to make some. My mom could make or bake anything!! And i mean anything. I happened to watch your video and this morning i thought, “i want those blueberry lemon scones.” So i made them. Well……. WOW is all i can say. I am now eating my second one just to make sure the first was not just a fluke😂!! It was NOT. It is so good i will be telling others how great and easy this recipe is to make and how they too can make them. Heat oven to 190/170 fan 360g flour 60g white sugar 1tbsp baking powder 1tsp salt Mix Rub with 170g butter until pea like in consistency Add 3/4 cup milk. Mix with spatula. Fold in 1cup frozen berries. Knead lightly. Roll into 1.5inch balls. On baking tray, brush tops with milk, dust with sugar. Bake 25 minutes. For drizzle, combine powdered sugar and lemon juice until paint like in texture. Drizzle over when scones are cool.

Hi my wonderful John, when I was a little girl lol a very very long time ago, my nanny was a fantastic cook , she taught me how to cook and now I’m a baker, but getting back to the scone’s, my nanny used to call them fattie cakes because they was alway cut imperfect, but they was the best scones you’ve ever had, even my children cook them, love ❤️ watching you John xxxxxx

OMG! I made this recipe this morning. The BEST scones I’ve ever tasted!!!! I opted for my food processor but kept your caution in mind. I pulsed very carefully making sure to leave bigger chunks of butter. The texture of the scone was like a delicate muffin and the outside had a delicate crunch. I’m already looking forward to breakfast tomorrow morning when I’m going to use my toaster oven to reheat before eating with scrambled eggs and sausage. YUMMY!!!

I made these today, they turned out amazing. I froze my butter and grated it. After the dough is ready and cut into 8 scones I froze them for exactly twenty mins before baking. Just as he said. They were better than any coffee shop pastry. Thank you for this perfect recipe and video. I hade no idea it was this easy to make fresh scones

✨Your extra baking tips are super! For example: variation in size of butter bits are okay!; cooling in the freezer- muy importante! or even freezing for another time! ; and, aha, brushing on the cream will also do away with any flour that ends up on outside of the scone! Thank you for sharing this video. My granddaughter and I made these today. She is six years old and did most of the steps herself. They turned out wonderful! She watched your pancake video while waiting for the scones to be chilled enough to bake. That may be our next recipe.

These look so yummy and pretty. I wonder if you take requests! I moved away from Oakland, CA several years ago and I miss the cornmeal and dried cherry scones a local bakery made there. Would you (or anyone reading this!) happen to have a recipe for such scones, or know where I could find one? And would the wonderfully detailed instructions you give for these blueberry scones also work for cornmeal scones? I definitely want to try your recipe, and I think the lemon sugar is brilliant!

I'm so excited! These look like the ones in the bakery section of the grocery stores here in the U.S. but I never tried them and now that I have Celiac & am dairy free, I can't. I will try this recipe with Gluten free King Arthur Flour, Earth Balance vegan butter & coconut milk and see how it goes!

Swap the flour for gluten free flour. I personally like a mix of any almond flour and great values all purpose gluten free flour. You can use just the all purpose but I like a little grit from the almond.

Truly! I don’t have blueberries today, but I was so inspired by your video that I made orange and dried cranberry scones! If your scones seem too heavy try half cake flour. It will really lighten them up. All cake flour and you lose the texture. Flours vary from region to region. 💖🌞🌵😷 (This hint comes from America Test Kitchen.)

Awesome recipe, thank you! Brilliant tips on breaking up the butter by hand, lemon zest mixed into the sugar and putting cut dough in the freezer before going into the oven. Just great!

These look delicious. In the UK we don’t have biscuits (our biscuits are what you call cookies) but do have scones however none of the recipes in my books use egg other than to glaze the tips. They’re self raising flour, butter, small amount of sugar and bring together with milk. That’s it!

My copy of your cookbook arrived on my doorstep this morning. I’m so excited to finally get it. I sat down and perused through the pages noting things I wanted to try right away. So… I made a detailed grocery list and went shopping. Thank you, thank you, thank you. My kitchen smells wonderful. I made Blackberry Balsamic Pork Chops tonight. Yum!

I really don’t like to spend too much time in the kitchen. But once in a while I just have to try something new. And this is it! Easy to follow, not too much work. The blueberry scones turned out absolutely delicious even though I used frozen berries.

Awesome recipe but I patted the dough into a disk and placed the entire disk onto my cast iron skillet, then scored it and the results were great. Your lemon sugar info is great. I use a cheese grater to grate the butter and it works pretty well. John, your recipes are wonderful, thank you

Your recipe is very close to the one I've been using however the technique is vastly different. Crazy you uploaded this recipe as I have been wanting to make some scones so I can use up my heavy whipping cream. I've made so many different variations of scones. All great but my favorite are orange, chocolate and cherries. I'm going to give your recipe a go. Thanks John... 😊 Almost forgot to add. I always sprinkle Sugar in the Raw on top after brushing with cream. Nice addition of texture... 😋

Ok, just made these tonight and the only thing I really forgot to do was infuse the zest with the sugar. As a huge fan of "American" style scones, these turned out amazing! Soft, tender and just sweet enough. I may go for a bit more sugar on the top or at least in the mix next time. I thought I initially over worked the dough as I kneaded it on wax paper to help with the sticky wet dough but I was wrong. I also took note that is pretty much my biscuit recipe outside of the sugar, zest and cream. Thanks for sharing!
