Lemon Cupcakes

When life gives you lemons, make a big batch of lemon cupcakes!! These are one of my favorite cupcake recipes, I love the fluffy, moist crumb with that lemony frosting. Each bite is perfect. They MELT IN YOUR MOUTH and just have an amazing lemon flavor I know you'll love. I decorated them two ways, with a nice traditional dollop and an easy piped butterrcream lemon weddger. Thanks for this great recipe. I made a a couple of edits to it to take the fat count down and plump the flavor. I reduced the butter to one stick and added a half cup of apple sauce. I also added 1.5 tbsp of high quality lemon essence. The little cupcakes came out just as fluffy and with an aroma to die for. We love them nekked.. with no buttercream... that's how flavourful they are. Thanks again.

Once made (they came out perfectly), I thought that the frosting was way too much (I have never had American buttercream frosting...). However, I followed the recipe and WOW! These are awesome!!!!! I made this but in cake form (no updates to ratios, just cooked double the time), and it's DELICIOUS. Added some raspberries on top. Also removed about half a cup of powdered sugar from the icing recipe- still came out very sweet so I'd try maybe 3 cups in the future instead of the 4.5 cups.

I'm going to try making these dairy and egg free cause my toddler is allergic. I'm excited to see If they turn out. I have all the substitutes so fingers crossed 🤞 Edit: Wow!!! 2 hours later and I've come back to say OMG these are delicious! I subbed the sour cream for homemade vegan yogurt, used an egg replacer, soy milk and vegan butter. Also used self rising cause I didnt have ap and left out the rising agents. I've never made cupcakes from scratch but these are honestly the best cupcakes I ever had. 😭 They are so soft and didnt stick to the paper. The yogurt gives them a pleasant twang almost like cheesecake. I could go on and on but I'll stop now. Lol

I made your apple pie the other night (we didn't bother with the latticing haha sorry!) although we called it a Flapple Pie as we didn't have enough apples to fill the pie dish so it ended up being pretty flat, the filling was absolutely delicious and something I'm definitely going to practice and perfect if I can.
