My mom was a single parent, and money was usually pretty tight, but she always made everything come together and seem magical for special occasions. For my 9th birthday, she scraped up enough for a strawberry cake mix, icing, and sprinkles. They were marked down and stacked together, like it was meant to be. I remember her worrying over whether it was enough/good enough, and I ended up proclaiming that I loved it so much I wanted the same exact thing next year. I’m 27 now, and it’s become an absolute tradition. Circumstances have changed so much, but my sweet mama still happily makes me my strawberry cake….albeit slightly fancier now lol. Long story short, this video actually brought back so many good memories and gave us a new recipe to try this time 💕🍓

Your mom sounds a lot like mine. She raised three boys on her own and there definitely wasn’t any extra money but she always made the most normal everyday event seem special. Friday’s was always butter pecan ice cream mixed with A&W root beer floats and made my favorite “fresh apple cake” for my birthday and really anytime we all just needed something a little special. Moms are incredibly special!

BTW... if you use strawberries grown in your garden, the cooking time for the reduction will be far less. Those commercially grown strawberry varieties are huge and FULL of water, while most garden varities are smaller, with a much stronger strawberry flavor.

It helps, too, to clean your berries by WIPING them, rather than washing them. Because, like mushrooms, running water gets absorbed and dilutes flavor.

Love that you use your still functional cake strips ❤ Not wasteful and like a normal kitchen. I prefer that to youtubers where everything needs to be picture perfect and brand new. It just shows that those cake strips are quality. After all those delicious cakes you baked with them they are still doing their job.

I used to make this, except that I didn't cook the strawberries first. Sometimes I mashed them and added them to the cake, sometimes I pureed them, and once in awhile used strawberry preserves in the filling, frosting or both. The liquid just means that you use thick yogurt or sour cream instead of milk or buttermilk. That frosting is so pretty.🙂

I would say that for marketing people adds a lot of sugar since people always wants sugar in cakes, for me my mom has always baked cakes with half the amount of sugar, and I always wondered why so many cakes have so much and my mom always said " for selling the amount needs to be more since that's what people want, even if it is too much for us" I totally get what you are saying, we are used to bake cakes with a little amount as well, but for the public that would be the usual I guess

I just made this and it's AMAZING. The frosting simply oozes strawberry flavor and the colour is beautiful. I did add an egg yolk because I was just a little insecure without it. I mean, they add eggs to cakes for a reason and yolks and egg whites aren't the same. (otherwise we'd make mayo with egg whites). But only one so that I wouldn't risk the colour and I have to say it came out ok.

I tried this recipe and it came out delicious, but I have a few questions about it: 1. My cake came out as quite dense, which I actually didn't mind. It created a nice contrast with the fluffy frosting. But it was more like the texture of a biscuit or a really thick donut than a cake. What could have caused this? Did I maybe mix the batter too much? The video says it should have been soft and pillowy. 2. I also noticed that the cake flavor was very, very subtle. It wasn't very sweet and the strawberry flavor was more of a hint. Again, it was almost more like a slightly sweetened biscuit with a hint of strawberry than what you'd think a strawberry cake would taste like. Is this correct for this cake or could it be caused by whatever caused the denseness? Either way, it was absolutely delicious, because the frosting was so soft and sweet and had so much berry flavor that the contrast with the subtler, denser cake created a perfect balance. I made it for my birthday and everyone who was there said they wanted seconds. So evidently I did something right, even if I technically messed up, haha.

Mine turned out very much the same. My strawberries were some of the sweetest I’ve ever had and the reduction was easy and so red it was almost purple. Yet next time also I will add the food color as when baked it was really gray in contrast to the frosting. The strawberry flavor in the cake was very muted though the berries were very intense. I think I’d rather have a wonderful white cake with fresh berries in the center and the strawberry frosting.

Suggestion John and others: empty your dry ingredients after mixed together onto a sheet of parchment. Make a funnel with the parchment and dry ingredients inside, pour this concentrated parchment funnel of dry ingredients into your mixing bowl! Super easy and flour doesn’t end up all over the kitchen!

Thank you for recipe. Looks delicious. And great for the holidays . Frosting awesome ! I will try it. Eye yolk tip only avoid yolks too. Add 6 table spoon s of butter whipped for batter . And for two cups of flour . Then fresh strawberries after cooled cooked. Add 2 cups of sugar and salt pinch. And vanilla teaspoon . Baking powder too. To batter and frosting . I will have fun baking this Cake . And maybe make cake cloth strips that wrap around baking pan wet with water. To keep sides soft not dry and create crust edges. Definitely old school item. saw this recipe last week ad we made it today!!I absolutely loved it but for some reason the amount of strawberries given in the recipe weren't enough to split between the icing and cake mixture 😭 It was a bit under the measured mount so the strawberry flavour wasn't as strong. We did however make a sugar brady syrup with some strawberry icing flavouring (didn't use it in the icing because we didn't want to accidentally make the mixture runny and we ran out of powdered sugar) which we then soaked into the cake. It came out so moist and the cream cheese frosting really is the icing on the cake (pun intended)!! SO excited to try more fo your recipes

This looks like a good cake but the frosting , that's way too much sugar. I made a cream cheese frosting basically the same but I only used 2.5 cups powdered sugar other wise it would be to sweet. I like sweet but 7 cups that's killer sweet bleh.

It might have been over mixed. In my opinion APF makes cakes too dense. I always use cake flour instead.
