Kawarma is a Lebanese traditional dish made from tender chopped meat with lamb fat. The origins of the recipe are much deeper and rooted in tradition.
Awarma/ Qawarma/قورما , Lebanese Lamb Confit is a preserved meat made by cooking down minced or diced lamb with a copious amount of rendered lamb fat!
Prior to the birth of refrigeration, awarma was cherished by villagers in the mountains of Lebanon. People back then preserved food as a matter of survival, and awarma was a way of preserving meat as to safely stop its spoilage; this was specially created so that the families didn’t go hungry in winter and a way to sustain them during the cold months and provide them with a safe source of protein at a time when people mostly lived on what they and their neighbors produced themselves, due to the limited transport systems and the lack of refrigeration. The awarma used to be sealed and stored in earthenware jars far away from sunlight - these days glass jars are used instead.
There is no reason you can’t still have awarma, it is incredibly rich and not at all difficult to prepare; keep a jar in your fridge, it comes in handy to flavor your hummus, add depth to your kishik, scramble it with eggs, or even awarma fatayer.
Ingredients:
1 kg . lamb meat, diced or minced If you are using minced lamb meat almost any cut is ok, but if you are dicing the meat as I did, I would recommend you use loin or rump since these cuts are tender and full of flavor.
800 g lamb fat, usually sheep tail fat (liyye), but any other fat cut can be used, dices into small cubes or ask your butcher to dice it for you.
1/14 tablespoons salt
1 teaspoon of seven spice or allspice, optional ( I prefer my awarma spice free)

Thank you for mentioning pemmican;I just did my research about it, and it's intriguing how different cultures have their own methods of preserving food. Awarma and pemmican seem to share some common threads in that regard. Definitely, I will learn more about it and make a video about it. Thanks again

@@raghebsaad9704 It’s definitely interesting how seemingly unrelated cultures developed such similar preservation methods for meat. Biggest difference is pemmican wasn’t spiced or salted, but it sometimes contained dried berries.

If properly prepared and stored under good preservation conditions, Awarma can last from 6 to 12 months, and sometimes even beyond 1 year. Awarma is an integral part of the Lebanese Moune, which encompasses all types of preserved foods. The preparation of “Moune“ typically begins before the winter season. And winter provides the ideal conditions for preservation. Awarma is traditionally made in preparation for the winter months, ensuring that it remains fresh and ready to enhance various dishes throughout the season.

Luckily grew up eating this my whole life and is one of my favourite Lebanese foods. Thanks to my mother I continue to make this for myself and the family. One of my most precious memories of this particular dish was traveling across Canada with my father to visit family and pulling over at various rest stops to enjoy breakfast Awarma and eggs with Arabic bread

Hello Dear, I didn’t try it, and I have never heard someone made it with liver, And I don’t think the results will be good, but if you are going to try it tell me about the results

Forget it. Liver is totally different in the way it cooks and not something you can eat much of in one meal. It tends to go terribly hard on frying. Deep frying in fat would make it like leather.

​@OffGridInvestor Just marinade your liver over night after you cut into pieces but add 1 teaspoon of baking soda to your marinade. The baking soda will tenderize the liver so when you cook it in the fat it will remain tender I do it all the time w great success. I love liver too.

اهلا، الهدف الاساسي من بدأ القناة كان نشر العادات و التقاليد اللبنانية و كل شي بيتعلق بالثقافة و التراث و التقنيات القديمة، لهيك كنت اكتب التعليق بالانجليزي ليوصل لاكبر عدد لان كل الوصفات باللغة عربية و ما في مجال لحدا اجنبي يتعرف عالتراث اللبناني يلي بيعتقد انو المطبخ اللبناني هو تبولة حمص و شورما و لحمة مشوية و منقوشة الزعتر و بس. و المطبخ اللبناني التقليدي كتير كبير و بالسوشيال ميديا عم نضوي عجزء كتير صغير منه و كنت اعتقد انو صارت اغلب الوصفات موجودة بكثرة بالعربي فاعتقدت انو ما حيكون في اضافة جديدة اذا اكتفيت العربي. لهيك كانت الفكرة باللغة الانكليزية بالبداية. و كمان اغلب المتابعين المهتمين بالمحتوى في صفحتي من غير المتكلمين باللغة العربية و ما عم شوف تشجيع من متابعين عرب للاسف. بس بكل الفيديوهات الجداد عم احكي فيهم بالعربي و ترجم بالانكليزية. و بعدني بالبداية و مع الوقت رح يتم التحسين و التعديل اكيد. شكرا لمرورك اللطيف، بتمنا تكون وصلت الفكرة و اكيد رح اعمل توازن بالفيديوهات القادمة.
