I love your canning videos. Thank you!! They’ve encouraged me to try my hand at pressure canning (previously I just did water bath canning). But one thing I would love to see is how you use your canned food, particularly the canned meat. I know you mentioned you plan to use this ground pork in soup, but it would be nice to see and also how you use canned chicken or beef.

I made the best beef broth this week! I have made it before but it did not have much gel to it. We had picked up 1/2 of a beef on Monday so I took 3 packages of soup bones and started them on the stove. I barely put water in it but just kept an eye on it. It turned out so perfect with so much gel to it. It excited me because I could never get it right!

Thank you for sharing this video. I agree that pork doesn’t freeze as long as other meat. Our freezer door opened during a storm but I was able to save the meat by canning it. I look forward to having chicken and roast beef ready for soups this winter.

I will try sausage again. Mine was too tiny pieces so will try bigger chunks. My freeze dried patties are hard to get soft again but convenient for gravy biscuits when broken and added to my gravy. Thanks Sarah!

I canned bone broth yesterday. When I butcher my lamb I plan on doing meals in a jar for Icelandic Stew which is so good. I will also be making Norwegian sandwich meat which I do every year.

A local butch had a great deal on 80-20 ground beef. I bought 5-10lbs rolls and have processes 40 lbs so far. I canned some, freeze dried some and made sloppy joes with some. One more 10 lb frozen roll to process.

I always fill my jars about 1/5 or 1/4 full of the liquid BEFORE I add the meat or vegetables, so I don't worry as much about missing any trapped air down there. After adding the food, I add more liquid proper level and de-bubble.

Thanks for showing us how to pressure can safely! About 10 years ago, one of the ladies from work had hers blow in her. Luckily she just got minor burns and a huge mess to clean up. My mom would always make sure that us kids weren't in the kitchen during that part! Apparently it can happen, especially if you get distracted or try to rush the process. Do you buy the seasoning at a store? I think I'd like that flavor!

We had our steer processed and lots of hamburger meat. I have canned a bunch in pints. Have used in spaghetti, chili, sloppy joes etc. I just add chopped onion and can in beef broth. Then I can add what seasonings I need depending on type of meal. Also canned a bunch of chicken legs and also breast meat.

You pretty much do it the same way. Bring to a boil, put in jars just like the meat, then pressure can for the same length of time as the ground meat.

I don’t eat pork except for I’ll have some ham and I like bacon and sausage, but I don’t eat any other types of pork nor pork roast no pork chops we don’t like any of that. So I use just burger, turkey lamb

I don't think I'm ever canning ground meat again - for sure not pork. Beef was ok, but not desired. I did pork and sausage earlier this year and we don't like it at all canned. But it's not going to waste - I feed it to my dogs and they are super happy with it. It actually reminds me of canned dog food so.........

The meat from grocery stores has water and other things added. That can cause the off taste. Since it's just the two of us I don't can anymore, but I do get my meat from the butcher shop.

I can my ground beef with peppers and onions in it, also use grass fed grass finished beef. So never had a problem with taste and it is generally used in spaghetti type foods which also have tomato sauce. ❤️🙏

My mother never canned meat, she felt it was too risky. Also she never had a pressure canner until much later in life so she just canned fruits & tomatoes which could be done in a hot water bath. She saved all the pint & quart jars from mayonnaise etc & used them for canning. Learned the hard way when she finally got a pressure canner that those jars couldn’t take the high pressure. Had a jar of corn explode. Luckily only a few mild burns but a HUGE mess to clean up. After that she only used good high quality canning jars in the pressure canner, never had a problem again. I miss canning. Living in a tiny house I don’t have the storage space but I do have a water bath canner & every few years if I get lucky & get some produce at a low enough price I’ll put up a few jars just to remind myself how good they are.

I was given 60 pounds of beef short ribs. I'm getting low on beef broth. I will be ready to can the broth today. It is quite a long process baking the short ribs in stages then putting them in the canner. Two full canners of beef broth simmering. I haven't about three quarts of fat so far. I wonder how others preserve this fat to use later??

I let the fat solidify and remove to small jars to use as tallow. I don’t have that much so just put in refrigerator. I believe if you jar it hot and let the jars seal it can be shelf stable in a cool dry place as other canned goods, such as lard. However be sure to double check the storage info. ❤️🙏

Christians eat pork because the vast majority of them were never forbidden to eat pork. If you read the Law of Moses in context, it was given only to the Jews, the descendants of Israel (Jacob - Exodus 1:1-9, 19:1-8), and specifically because they rebelled at Horeb - note that in Exodus 20-23, the first giving of the law before the Golden Calf episode, there is no such regulation. It's not until Deuteronomy ("second law") chapter 12 that the law against unclean food shows up. Most Christians are Gentiles. The idea that the Gentiles are not bound by the Law of Moses was confirmed by the Church at a council in Acts 15. Also see Genesis 9:3 - this is the covenant that Gentiles are under, which says they may eat anything. Peter's vision in Acts 10:9-16, where he has a dream commanding him to eat "unclean" food, is cited as evidence that not even Jews are required to keep the law anymore. (See also Galatians 2:11-14.)

In biblical times, and in many areas of the world today, pigs were/ are allowed to roam freely in villages, etc.. Since they're omnivores, they ate/ eat all sorts of disgusting things in those conditions. Modern pork producers, including homesteads in developed nations, keep pigs in vastly different confinement where their access to such disgusting things is non- existent. That said, everyone has foods that disgust them. For me it's green beans.

Leviticus has all sorts of injunctions against various products, such as mixing crop seeds in a field ( no pasture planting!), wearing clothes of mixed fibers, planting vines among vegetables, allowing cattle to breed with non- cattle, etc..( beefalo). Most of these are also totally ignored by the otherwise "faithful".
