Our new canner is proving it's worth here on the homestead! I will never be without a digital pressure canner again! This really takes the work out of it! Finally we are no longer prisoners in our own kitchen! This thing is a true game changer!

Absolutely correct. 1/2 cup dry beans for pints process 75 min and 1 cup in qt jars and process 90 min

I have been pressuring canning with.my mother since the 1960's. I am the eldest of 10. We never soaked beans before canning. We pressure canned for 75 min 10 pounds pressure. We canned red beans, black beans, pinto and used white beans when we canned soups. The only time we soaked the beans and parboiled them was when we were making for example chili beans for dinner. We would parboil to remove any gases that floated to the top rinse them and then proceeded to cook them. Sharing is caring. p.s. my mom is still alive and well 😅

I can more often than I ever did before. Small batches are the only downside, but if you can more often, then I guess those small batches add up. I almost want to buy another one.

Just looking a your video. I recently bought this canner I love it. ON THE BEANS some info I fill my jars like you do but I leave them over night so they swell up and soften. that way the heat can penetrate the bean and it is safer that way. Also I know if I have too many beans in the jar.

Yes….but just slightly under one cup of dried beans to water to right under the first ring on the shoulder of the jar works great.

Yes you can do 5 qts in this canner however I would soak them for quarts. Put 1 cup of dry beans in the jar and fill with water. Let them sit overnight.Add 1 tsp of salt and can them. Pressure can 90 min.

Just ran across your video. Very informative, but I do have a question about the size of your Presto canner. I am looking to add another canner for my canning needs and need one that is able to do pints and quarts. Thank you for your information.

It pressure cans quarts as well. Does 5 at a time. A little less than the old canners that did 7, but being able to walk away negates that, in my opinion. The only limitation is that this unit can't waterbath quarts as the water isn't deep enough. I absolutely love it. It's a real game changer!

Question for anyone. Never canned but hope to this year to preserve some of my garden. If you do dry beans the way you did they are cooked and ready to eat when your done right? In the future you'd just have to open and heat?

Yes. You can also put everything in the jars and let the beans swell overnight and then pressure can. The consistency comes out better.

I love this canner and use it regularly. The reason to not can the beans unsoaked is because the heat cannot penetrate the center of the beans properly as it can when they are soaked.its easy to soak beans overnight, bring to a simmer for 30 mins then can them.

@markellyfarm I did with the black beans before I found out why it's important to soak them first. It's OK, I'm just all about safety. I know alot of people can then dry in water.

@MsKatherineJo 1/2 cup soaked beans, yes cause they will continue to expand during the Canning process and will absorb the water so be sure the water level is correct.

@@OneBrightLightTN wayfair had them for $225.00 and we bought two. Now that they are out of stock they increased their price to like $350.00 which is what amazon was selling them for. There are some listed for like $700.00 by people taking advantage of the shortage.

Don’t forget to add the 2 Tbsp. Of white vinegar in with the three quarts of water. I love my 12 Qt. Presto Precise Digital Pressure Canner. I got it in December and have canned something almost every day!

White vinegar will damage the seal eventually. One teaspoon of Cream of Tartar is much kinder to the seal and the canner.

I just got this canner. There is now an orange warning notice saying do NOT add vinegar or cream of tarter to this canner. It damages it. Unfortunately, the directions included this step.

Very Good tutorial.I’m new to this.can you cold pack everything or does some need hot packing? If so can you do a tutorial on that please?

Its not recommended for everything. Raw materials are ok to cold pack but anything prepared like soup needs to be hot pack. Now with that being said, you can actually add the ingredients and cook it in the jar like we did with the beef stew. You do want to avoid thickeners.

If you are doing another cooker of beans do you have to dump water and start with room temperature water in the canner?

As long as you let the pressure fall on its own, the water shouldn't be too hot for the jars, especially if you are adding more water to top it up. If you are worried about it being too hot, just change out the water or just run your jars under some hot tap water briefly before putting them in.

Did you add salt? I didn’t see where you did? I canned my first time in my canner did pinto beans with no salt just tap and a tsp or so of onion powder.

We actually grew them here on the homestead. The previous owner gave us some dry beans to plant.

I have to speak up about the electric canners . I have been canning for over 20 years now, please note electric canners are not safe for canning foods here are the reasons why The electric canner cannot sustain a temperature for a certain product for the amount of time to kill off the spores that cause botulism . Electric canners are in the business to make money they do not care about your health and safety . Electric canners companies do not use third-party testing to make sure that the temperature inside the canner is sustained for certain amount of time allotted for the food inside the jar to kill those spores and if it doesn't reach those temperatures like a regular canner does with a valve and a PSI that shows you how much pressure is being released per minute you are putting yourself and your family at great risk of getting botulism. If people want to learn about canning they should go to the Blue book or call your local extension office or the Utah local extension office it is so scary to see people following other people who know nothing about proper canning methods botulism can kill you it can give you a stroke it can destroy your brain you have to learn how to walk talk stand up think it will take you if you're lucky years to recuperate from botulism.

I just got the pressure canner. It’s my first time pressure canning, I’ve done water bath previous with the non electric version. But my air vent won’t rise. Does it take a long time to rise on the electric canner? It won’t get past the CAN phase.

It takes a bit. Check for steam venting around the lid. If so, make sure your seal is in correctly. The only other reason would be if you didnt put your vent in can mode. Run it without any jars to cycle it.

If you ran it without jars it will also take longer because there is more square inches to pressurize.

5 qt jars. Pressure can only for quarts. Not deep enough for waterbathing quarts.

Yup. Half teaspoon for pint. Whole teaspoon for quart. If you do quarts i would recommend that you fill the jars the night before and let the beans swell.

I dont know how shrimp would come out. I dont like them overcooked. Might be ok. I would love to live in an area where there was enough shrimp to can!

I'll bet from frozen would come out just right. If heat builds up fast then you set... I think it's only 10 or so min for shrimp. I retort can too so I could probably use bags and fit more in. I'll have to ask my retort canning people. I'm sure someone has tried. I retorted shrimp once and the pressure turned them to mush ... it was a long process waiting over an hour just to get to temperature ... so a lot of cooking time.

Ours turned out great. Hope you figure out the issue. Your beans need to be nice and firm when you start. They will not be crunchy by any means but definitely not mush.

Do you double stack the pint jars or just a single level? If you double stack the jars, do you place a rack in between like you would for a stove top canner?

It's not tall enough to double stack pints. A rack is always recommended if you stack.
