Ingredients:
400 gms Chickpeas (soaked)
1 inch Ginger
1 inch stick Cinnamon
2 Black Cardamom
1 tbsp Tea Leaves
1 tbsp Pomegranate Seeds
Water
2 Onions (roughly cut)
1 Tomato
Salt (as per taste)
1 tbsp Chana Masala Powder
1 tbsp Ghee
2 Green Chilies (slit)

Wonderfully informative and great presentation. Would there be anything to substitute for the ghee at the end? Can one just omit that step? I am vegan and don't eat dairy.

I cook for my vegan family and use coconut oil, the kind that is solid at room temp. It doesn't have the buttery richness of ghee but has the "fat" and texture. Vegan ghee is available but it's quite expensive where I live, about $12 for a rather small jar and I' find vegan butter unsuitable because it has a high water content and doesn't clarify well, doesn't taste that great either so I'd rather do without and stick with my coconut oil for tempering as it takes on the flavour of the the spices very well and has a similar melting point to ghee. No complaints from anyone that I haven't used ghee in any of my dishes, in fact, quite the opposite. Hope you find this helpful.

Yes please to pressure cooker recipes ❤ It's homemade super healthy fast food! It's so great if I'm too tired to cook and yet still be able to make something delicious and nutritious. The only complexity for me here is that my pressure isn't the whistling sort, but I will muddle through. Thank you!

Thank you for the wonderful explanations about the nuances of flavour along with this recipe. Have a question - I have been making this recipe slightly different and using my ingenuity had ground the anar dana for ease of use. This means that the anar dana stays in the preparation. Do you have any insights about the appropriateness of this?
