Being a food canner first and a shroomer second, I would highly recommend purchasing a weighted jiggler. It allows you to select a desired psi by the use of weight rings and release unneeded higher pressure on its own. This avoids excessive boiling off of the water which can warp your canner, a pressure above 15 psi which can caramelize your product and use excess power. It only needs to jiggle once or twice a minute and not like a hula dancer. It definitely reduces anxiety often associated using a pressure canner. Knowing that 5 regular mouth pint jars will fit in my instant pot is super helpful. I was using half pint jars stacked on top of each other. Thanks for the great content! When the PC is cooling. When it reaches just over 212F I swap the weight with a DIY polyfill filter rinsed in isopropyl. The final steam exhaust exits through the polyfill, adding some sanitatizion and driving off iso. and as it cools the ambient air is drawn through the filter. into the PC. So I can save flowhood space by cooling in "dirty" air. I am just an amateur, learning as I go. interested what you think...

I've always sealed my bags before going into the pressure cooker because I have issues sealing them after cooking when they're wet. When I fold the flaps down I make sure the filter is facing up. Come to think of it, even the bags I had issues sealing after a cook were successful so, it might be fine. I only just started using bags so still working out the kinks

Thank you man, i will give tyndallization a try. I am struggling with a 10liter ish pressure cooker without a gauge and i can only do 2 bags. I was thinking to turn a 50l bier barrel like a fellow mycologist has but it will not worth the hussle for me since i will stop this hobby for a while in the future.

I have thought about using vacuum to sterilize, as I have fairly extensive vacuum pump experience. I have not tried it because of the following: 1. You can not lower the pressure below the saturated vapor pressure of water, as it will boil - around 24 Torr (0.5 psi absolute = -14psi gauge). This will remove the water from your substrate and dry it out. 2. Most research I have found indicates that bacteria, yeast, and mold can survive vacuum, and that vacuum does not kill endospores. They are stunted by hard vacuum but appear to be able to grow again after return to atmospheric. It could possibly be enough to allow the mycelium to get a foothold though. 3. Vacuum expansion could possibly more burst grains, which experienced mycologists find greatly increases contamination rates. However, it is a very interesting idea, and I would love to see some test protocols of the methodology. Won't know for sure until we try :)

Hi Paul is it ok to put liquid culture for more than 40 min in the insta pot? You said more than 45 min could caramelize the sugars making them inedible for mushrooms.
