Hi Dr. Hans. Thankyou for sharing and all the good answers. Following up on the yest under pressure issue: I have tried 11,5g of SafAle WB-06 that I just bought (good for wheat beers), optimal temp at 24*C. I put it in at 28*C, and it kicked in inside 24h, maxed about 36h, and slowed to about still at 48h. Temp dropped to 24-25*C inside 24h. Pressure build up (did not add CO2) to the 2,2 bar I put the spunding valve to inside 36h. The OG dropped from 1,040 to 1,020 after about 48h, but now no further drop about 100h in. I have now given another batch of SafAle WB-06 w/o much action 24h in. Beer tastes sweet as a wheat beer but still rather malty. Seems I need to bring gravity further down... Any suggestions or ideas as to what went wrong?

Hi! Thanks for the beer to start with. First I must ask you a basic question, are you measuring gravity with a refractometer?

@@steffen1919 we could only guess. But lowering the temperature during fermentation could be one thing that can make yeast drop out of suspension. You could try to raise up the temp and do pressure release to kick up the yeast in suspension.

Great brew footage. I've used my brewing gear to do sous vide before but never while mashing. I wonder if I could sous vide kangaroo while mashing an Australian pale ale? Hmmm, I guess that's an experiment for me to do. 😊👍
