A great video and thank you taking the time in showing us. A Pullman bread pan is a new one for me as is using a thermometer. That’s a great tip that I shall use in the future. I am very wary of using a metal container that fits tightly into the ani ja pot. I have frightened to scratch the pot. Finally, did your loaf have a good crisp crust as I didn’t hear anything when you bit 8th the slice. Once again, thank you for the vide and I look forward to seeing the next one.

there are 2 classic white loaf recipes on king arthur website. one is 4 cups flour one is 3 cups. the 3 cup recipe says packet of yeast or 2 teaspoons. a packet of yest is 2 1/4 teaspoons. after several not great loaves i caught it. used 2 1/4 teaspoons and finally success. i found a measuring spoon someone made on amazon specifically for yeast. it's 2 1/4 teaspoons.

Thanks for the video, it's really easy to follow. My dough is rising but the pullman pan does not fit in the 8 quart. I'm afraid if I force it, it will scratch the insert.

Oh no! The one that fits is from Monkish-But as you already have one others have filed down the lip/side of pullman loaf pan to make them fit. The one from Monfish fits but is very tight. Don't forget to place a silicone mat or parchment paper in bottom so you don't scratch the bottom. To make it work this time if you have the loaf pan from Ninja or have a loaf pan that fits shape it and place in that and let rise. It will work in the 8 qt.

No but you could keep lid on for 1/2-3/4 of the cook time then remove it so it browns up. Hope this helps.

They must be sold out of the one I purchased. I can't advise on another as I haven't purchased a different one. A lot of people have purchased other loaf pans and then had to file down the sides. on the lid. I'm sorry. Add 1/2-1 cup of water close lid set temp to 105 using dehydrator function-preheat for a few minutes then shut off Ninja Foodi and then place bowl with dough into Ninja Foodi and let rise.

If you have the 6.5 qt. it may get too close to the heating element-definitely cover it. I did make a loaf in the 8 Qt and didn't have to cover it-the top was very brown but not burnt. Yes you can use the dehydrate function I wouldn't go above 105F. Hope tis helps. thanks Lou Ann. B!

I remember when I was a little kid you could buy Pullman loaves at the corner store or grocery store just like bread today in a plastic bag it was long and it was brick shaped and in a plastic bag and it said Pullman. I think that every Bread company made a Pullman loaf or at least a lot of them. I think that is what became sandwich bread in the store that say sandwich bread on on the wrapper.

I just made Japanese bread in the 8 Qt. and it has the dehydrator function. I used dehydrate function at 105 for 5 m minutes then shut off Ninja Foodi and placed dough in NF covered with Saran Wrap. proofed for about 60 minutes. I prefer not to leave it going due to the fact it would dry out the bread and proof too quickly missing out on a little bit of flavor from the yeast working their magic. In the future I'm going to make a bread leaving the starter out overnight on the counter to increase flavor.

Yes you can Kathy-bread flour has a higher protein content and will make a tougher/chewier crust. it. depends on what you want from your bread. If you want a soft sandwich bread use regular all purpose flour(preferably unbleached but use bleached if. you have it). I use bread flour for pizza dough, bagels and some of my hearth. breads and sometimes I even mix the flours. Experiment and find out what you and your family likes in a bread for texture. and flavor-from crust to crumb! Thanks Kathy!

Thanks for the video. Bought ourselves a Pullman pan as a result and am impressed, much better than using a silicone loaf tin. Now our results weren't too great though. Dough proved well, nice bounce back from indentation, but not too springy. Loaf rose well, beautiful even golden colour and internal temp was spot on. However although the texture looked fine, it tasted really doughy and became soggy when buttered. I'm in UK so using different flour from brand you mentioned, did you use a ordinary all purpose flour or strong bread flour, ( I used strong white bread flour ), also our ninja works in celsius , not fahrenheit, so can't get same temp as you recommended, do you think I should go higher or lower ? In a normal oven we usually go much higher than you do for first 15 mins then reduce for last 20, but still higher than you use, is this because Foodi is so small ? We will definitely be trying again.

Thank you for watching and commenting. The flour is an all purpose flour(not bread flour) the protein will be lower on an all purpose flour compared to the bread flour. Preheat at 350 degreed-Celsius it would be 176.667 to be exact-lol. probably could get away with 180 degrees Celsius. I like my internal temperature of bread to be 200 degrees(93 Celsius) I think this prevents bread from being"soggy or moist inside". Also how sticky was your dough-this is a sandwich bread and you do not want it sticky. If you find your dough is sticky at the end of knead time add a tablespoon(small spoonful) of flour at a time and knead/mix for a bit until incorporated if you need(knead-lol) more adda bit more. Try it again and let me know how it comes out. thanks.

I looked at that website and they sell a bread flour too, which they explain is higher in gluten and protein, the level looks similar to my flour. They say we need to add an extra 2tsps of water per cup of flour with this one, so will try that next time. Thanks again x

Quick, personal update. I now know that the texture seemed strange to us, simply because what you refer to in the US as sandwich bread, we refer to as enriched dough. Our classic sandwich bread contains flour, water, yeast and salt alone. It is thanks to this video though that we are now baking 2-3 homemade loaves a week , as you sparked an interest in it again, after becoming fed up with bread machine loaves with hole in middle. I must try this recipe again soon though, now I know how to hand knead dough, and know when it is ready to bake. Thanks again.

I want to do different breads-rye, whole wheat, honey oatmeal just to see how they come out I. the Ninja foodi. Homemade bread is the best! @@karenhadden4980 Hi Karen,Which foodi. do you have the 6.5qt or the 8 qt? To be honest a bread. machine is the easiest. I have used it. a few times but prefer. using the regular oven in the winter and a bread machine in the summer. It. was a challenge just to see. if it could be done. But If I was living in an RV or something I would get the pan and bake breeding the foodi. Or if you have plans to get the new Ninja xl oven I wouldn't get the pan. Hope this helps.

@@derby1263 I didn't take it as disrespectful-we use the English system not metric(our measuring cups usually come in 1 cup, 3/4 cup, 1/2 cup, 1/4 cup) but I could use weights but we use oz. and such in US but could do grams.
