Edit: To be fair a Guinness and a ham sandwich isn't a bad combo although I'll admit my choice of sandwich for the occasion would be a Ruben complete with sour kraut and if the roast beast is overcooked it isn't worth it. Okay, on the serious part of it. To be able to work that tower in sections like you did, that's extremely well thought out. I was a little bit concerned when it came to first erecting the base of it, but you managed to pull it off quite well. Glad you're doing it this way.
