Hi! I know I'm 6 months late, but I figured I'd answer in case someone else also had this issue (I did too). You probably have a newer version of PS than what's being used in the video. In the dropdown menu at the top where it says "Gradient", you should choose "Classic Gradient". This will show the older version of the gradient menu.

This is a simple pattern with straight lines so it should be easy to repeat with an offset filter and cloning.

PNG is a larger file size but better quality for defined lines like text. It will give you crisp lines. PNG also supports transparency, jpg doesn’t. Not much different apart from that.

Yes, that’s true, but I haven’t seen this particular method used in other tutorials so I thought I would add another option. There are so many ways to do everything in Photoshop, this is just one more :-)
