One of my favorite outdoor channels. Like potatoes? Take two servings red potatoes, half or whole green pepper, half or whole onions, butter, Johnny's seasoning salt. Quarter the potatoes, dices or slice the onions and the green pepper. Take a quarter stick of butter, lightly add Johnny's and mix with everything then wrap in tinfoil (Do all this before you head out). Heat on a gas grill, on top of a skillet or in the coals of a fire. Wait till you hear it sizzle then cool to taste and serve. For a more crunchy texture take out of foil and cook a few minutes on a greased skillet.

Our go to favorite got to be a Scouts Special. One pound of ground hamburger or spicy ground breakfast sausage. One large potato cut into thin slices one large sweet or yellow onion course chopped one to two large carrots cut cross sections into medallions. Season with black pepper garlic powder and smoked paprika optional. Mix the seasonings and chopped onion together and form a large pattie. Then cut a large enough piece of aluminum foil to hold all the fixens. Place the potatoes slices and carrot medallions on the bottom of the aluminum foil shiny side in. Then place the hamburger or sausage patties on top of the veggies. Fold up and seal tightly. Place foil packet on hot embers for 45 minutes to and hour turn it over every 15 minutes. It is a hearty meal easy to make will taste even better. When serving some steak sauce or Worcestershire sauce to taste rocks.

Man, I don’t have the opportunity to get out like you do - but I’m laid up under a blanket with 3 dogs, and the new headphones my wife gave me for Christmas. With the soundtrack, your description, the rhythm of my dogs breathing, I can almost be there. You do a great job of visually and verbally weaving a compelling narrative.

Kind of old school. 2- 8" cast iron skillets, one lid. One skillet contains Jimmy Dean Sage sausage, shredded potatoes, eggs, cheese, onion and peppers. Skillet/lid for biscuits and gravy. Lots of butter. I usually cheat and buy can biscuits and canned sausage gravy. Sense you have the 4 legged dish cleaners, makes a fairly simple set up. Cheers.

great vid and absolutely stunning views. Nice overnighter. I live in Texas, so my favorite winter meal is, naturally, chili. If it's just for me, I take a pound of ground beef, a pound (or so) of stew meat. I first sear the meat in a mixture of spicy oil (recipe follows) & olive oil. Then I put them i a crock pot and add 1 12oz beer, about 5 tablespoons of chili powder, an equal amount of cayenne powder, 1 - 2 teaspoons of cumin, and 1 - 3 of either Asian or Habenero peppers sliced up. Add in a diced up sweet onion, and Red and Yellow bell peppers for color. Cook it on high for 1.5 hours, stirring occasionally, then on low for 1.5 hours. If it's a little wet at the end, add a teaspoon or so of corn starch to thicken it. Serve it up with tortillas and your favorite beverage. the hot oil is: 1 1 quart Mason jar fill 1/3 way up with your favorite dried peppers add 1 cup of either Bourbon or Jack (you could of course add Pendleton :-) ) fill the jar the rest of the way up with half salad oil, half vegetable oil. seal jar and set aside 30 days. after 30 days, decant into a pouring vessel and use sparingly as it'll be very spicy. Also, I finally tried Pendleton and must say, as a Scotch and Sour Mash drinker, it's right nice. Cheers! DonP

Simple cheesesteaks but great to eat on for a couple meals: Loaf of bread (any good size loaf, large baguette), cut about 3/4 through creating slots for filling Sautée peppers and onions, add some jalapeños for spice Thinly sliced tri tip steak, seared/cooked to med rare (All that can be done on the skottle) Once you’ve got the filling, stuff the meat and peppers into the sliced sections of the loaf, top with provolone. Wrap the whole thing in foil and slap it right on a fire for a good while to bake the bread a bit and melt the cheese. Open and devour.

Wildman Dans famous Texas Turkey Tacos. Fry 1lb ground dark turkey, after seasoning. I use my own blend but 1 or 2 packs of “taco seasoning” is ok. Season it hard because the turkey has no flavor. When it’s brown add 1 can of Ranch style beans with juice. Put in your tortilla of choice and go as simple as grated cheese and chopped onion or make it look like Saturday night. This is a great healthy, hearty protein mix that will stick to your ribs. You will be surprised how everyone loves it!

Our "minimalist" favorite recipe EVER (we are definitely NOT minimalists, but it's all we had to work with one night). Marinate a chicken breast at least 2 hours in a mixture of the juice of a lime, a few sprinkles of cumin and a tad of salt. Cut up chicken and cook on cast iron or skottle (sp?). Place cooked chicken inside a big flour tortilla, add some well aged Monterey Jack cheese. Fold it over and then brown both sides of the quesadilla back on the cast iron or skottle. The simple contrast of the lime flavor and the rich Jack cheese is wonderful, and makes a handy finger food on trips. We look forward to your videos and enjoy camping and fishing not far from where we live, in the southeast.

Just got home after visiting grandchildren for Christmas. I have a glass of Pendelton on desk. A neighbor gave me a bottle for helping. It is not bad but I do still prefer our local Bend Distillery Hazelnut Vodka. Winter camping is great but so many are clueless about the skills needed to be safe while winter camping. It is so easy to become stranded in the snow due to poor judgement. I am am an old Boy Scout, "be prepared" . It is so peaceful to be out in winter and loose the crowds often found in the Cascades. We keep our trailer stocked and ready to go when good weather permits safe winter camping. I had a trip scheduled over Thanksgiving week but decided to cancel due to the forecast. It was a good call. Way too much new snow fall to be safe in the back country.

Thank you so very much for a glimpse of winter camping. I camped in my Vintage Trailer Works tear drop off road Camper with my husband and two dogs over Christmas in Lost Dutchman State Park Apache Junction, AZ. Superstition Mountains were gorgeous! Second time there over Christmas. It rained and poured cats and dogs, it hailed, and went down to low 40's. Thank God we had our ARB awning and 10x10 screen room. And Thank God I borrowed my daughter's space heater. It was cold. We never put the heat on in our teardrop, because we pack so many blankets. We had a great time and adventure was fun. We never got our wood dry enough to have an outside fire. Next time we will. Thanks for your inspiration and sense of adventure. Merry Christmas and Happy New Year! Looking forward to more videos. Thanks.

First time out backpacking with my two older brothers, in the Caney Creek Wilderness (AR) - I think it was around Thanksgiving time, we had the simplest, best tasting, most welcome meal. Being novices to backpacking we'd mostly packed trail mix, and similar items, but our last meal was a large can of Ranch Style beans (a TX thing) w/ a pkg. of freeze dried bacon, for a makeshift chili. Cooked over a Coleman Peak 1, it was, at the time, a gourmet meal. With our rented tent, sleeping bags, frame packs, and trail mix... we learned a lot that trip.

My most favorite comfort food is spaghetti and your having a scottle makes it easy to prepare. I start by browning one pound of lean hamburger, add sliced mushrooms, diced green pepper and green onion; add some pressed garlic if you wish. I use a collapsible Sea to Summit pot to boil my linguini (or any pasta of your choice) which I break into half adding a little Himalayan pink salt and a tablespoon of extra virgin olive oil to the boiling water which helps to keep the pasta separated. Add spaghetti sauce to the hamburger mix just before extracting it from the scottle to pour over the pasta. McCormicks spaghetti powder mix can be used to thicken the sauce. I usually have thick Texas garlic toast using a forked stick or a two prong metal rod. It all sounds complicated however I'm normally eating within half an hour plus enjoying an adult beverage...yes, red wine can be an option. Left over spaghetti is incredible and I make a Hawaiian version of "Loco Moco" by frying a couple of eggs and laying them over the warmed up spaghetti.

I think I put this on one of your previous videos, the last time I saw Dinty Moore on your channel. I call it Stew Mac. It was inspired by my dad, who passed away when I was 17, and that darn stew was his favorite. Cook Annie’s cheddar Mac and cheese shells, then mix some broth from the stew, with the cheese powder and any seasonings (I like to use Indian curry powder and cayenne pepper) until you have a sauce. Mix in the shells, until coated thoroughly. Then mix in the stew and heat until you’re satisfied! Takes about 15 minutes to make and fills you up good! Safe travels, and thank you as always, for the inspiring content!!!!!

Cedar plank salmon! Super easy to make and even for those who aren't into fish will love this recipe! two to three steaks of wild caught salmon (trout or any fish works for this) 2 or 3 planks of cedar 1x6 length cut to your preferred size. Soak the planks over night in water, place the cedar planks on a campfire grill over the fire. baste the planks with olive oil, place the salmon, trout skin side down on the plank. Salt and pepper to taste. cover with skillet or frying pan lid 15 to 20 minutes. That's it! the cedar smoke cooks and flavors the salmon and the smokey taste is nothing short of delicious!

Mine is flat rock (granite) seared steak over the fire. Onions in foil with butter and maybe a potato. The fat mixes into the granite and gives it a nice "minerally" taste. Simple seasonings to taste and just cut and eat as it cooks. Not always easy to find correct rock as it shouldn't be river rock. Have had those pop or explode as most would know but I had to prove it to myself :)

Loved the video! Our goal is to do a few winter tent camping trips in the next few months. I actually self published a small cookbook that caters to cooking outdoors without an oven. Here is one of my recipes for Chili Pasta that is very easy and you can actually use the bear meat that you often reference instead of ground beef or turkey. Hope you enjoy it! (This serves 4 so adjust accordingly for 1 to 2 servings) Ingredients : 1 12 oz Box of dried pasta (rotini or elbows will work best) 1.5 lb Ground beef 1 Can of diced tomatoes (14oz) 1 Can of red beans (15oz), drained 1 ½ Cup Water ½ tsp Garlic powder ½ tsp Onion powder ¼ tsp Cumin ¼ tsp Ground coriander ½ tsp Chili powder ½ tsp Each salt and black pepper A pinch of crushed red pepper (can add more if you like it with a bit more spice) Shredded cheese, sour cream, chives for topping (optional) Preparation : Heat a dutch oven or large sauce pot over medium heat and brown the ground beef (if you are using a beef that is high in fat, be sure to remove some of the liquid fat as it is cooking). Add in dry spices (garlic, onion, cumin, coriander, chili powder, salt, pepper, and crushed red pepper) Once the ground beef is browned, add beans and diced tomatoes, and add in water and bring to a boil over high heat. Stir in dried pasta and lower heat to medium. Let pasta and beef simmer for about 15 minutes or until pasta and beans are tender and most of the liquid is absorbed. Stir and enjoy hot with your favorite toppings. Let me know how it turns out if you make it! Enjoy!

A Hobo dinner. Wrap ground beef season to taste, sliced potatoes, and sliced carrots all in a tin foil pocket. You can just throw on the coals of the fire or any grill to cook! Can substitute any meat really and make portions as large or small as you want, great any time camping meal.

Your fancy meals are fun sometimes, but its great to see how you can put something together out of not much. These would be a great addition in the future in my opinion because sometimes, you just want to get out and camp, cook an easy hearty meal keep it simple and inexpensive (especially if you have kids)

Super fancy hot dogs and mac and cheese is my winter favorite. Recipe is real fancy, cook hot dogs and slice and combine with mac and cheese. In all seriousness, those hearty savory meals are the best in the winter, not real healthy but they are soul warming.
