There's a Malaysian Chinese stew that are similar to this called Chai Buey (roughly translate to leftover dishes) or mustard green stew, where we cook the leftovers (mainly meat), but we don't just throw anything we have in it, the base is made with pickled mustard greens, fresh mustard greens, dried chili and dried asam gelugur (tamarind slices). It's a spicy acidic dish that are usually made after Chinese New Year Eve dinner (which leftovers are plenty).

There's definitely nothing wrong with using leftovers to make a meal in of itself, it's just his method of "take everything you have, throw it in a pot at the same time, cook for four hours" that makes it seem...blegh. I've combined various leftovers to make a single meal plenty of times before, especially after holidays, but I don't think I've ever just taken every single leftover item I have and just tossed it in a pot for hours on end. I'm trying to make a decent dish out of leftovers, not prison loaf.

My teacher gave me a firm telling off for leaving dirty, unused utensils and mixing bowls in the sink after ive finished cooking, saying its caveman behaviour and shows no consideration for myself and for others. The mayo in the Pork n' Beans had me turning a bit green... but in the Garbage Stew, the hot dogs started making me laugh and remembering my Filipino mother-in-law. Look up the recipe for Filipino Spaghetti, prominent ingredient... Hot Dogs. The second year that she was here in the USA, she decided to try cooking a Thanksgiving Day turkey. When she brought it out of the kitchen on the serving platter and placed it on the table, I thought, "Hey! She did a damned decent job for her first attempt", that is, until I saw the back end of the bird. There in the cavity opening, arranged in a circular cluster, were a bunch of hot dogs, stuffed in the cavity opening much the same way someone would do trying to smoke 12 cigars in their mouth at once. I was truly speechless, then after she removed the hot dogs, out came quartered potatoes and 3" stubs of carrots. Her next Turkey as a lot better with my guidance... remember, as for as I know, they don't have Turkeys in the Philippines, so I had to at least give her in A for effort. Common sense says to not let the food get that bad. Use it up before it gets dangerous.
@melikatalks767611 ай бұрын
@vhfgamer Yes, definitely. But common sense, unfortunately, doesn't always line up with the inconveniences of life. I've been guilty of this. You do the grocery shopping, you go to uni, get back home, go back to work, get back home, and you're too tired to cook it but to poor to order food and it goes bad and you feel guilty for throwing it out. It's not a good place to be in, but I don't think anyone out there does it intentionally.
@melikatalks767611 ай бұрын
@vhfgamer I'd also like to point out the amount of guilt that most of us associate with wasting food in any shape or form. This is kind of a long story, but in my religion (Islam, but I'm sure this is true for many others), we are taught that food is sacred and wasting it is strictly forbidden. I honestly think drilling this point is one of the reasons people develop eating disorders. I personally have so many unpleasant memories associated with this. For example, in our kindergarten, the teachers used to tell us we had to "clean the plate so good that we could see our reflection!" I remember my father doing a whole routine every time something was about to go bad: a series of consecutive warnings that it was time to eat it. Finally, he would eat it himself (he did it to make a point to us). In our culture, we are told food is so sacred that even if you see a moldy piece of bread on the ground in the street, you have to pick it up and put it on a high place. Stuff like this is more often than not rooted in past poverty, but so often has the opposite effect than what it desires. So, while you are absolutely right about it being common sense (it seems stupid to eat something off); there's much more complicated underlying issues to consider. I.E. even tho I now know it's dangerous to "just cut off the mold and eat the rest," all my life I've been encouraged to do this to avoid food waste, which is quite dangerous advice!

I just wanted to tell you that since I started watching your channel I've learned a lot.. When I was younger I always did want to become a chef but of course that didn't happen .. I struggled with things such as drugs and alcohol .. I am now 10 years clean and sober now... I wish I would have followed my passion and went to culinary school but I just wanted to say thanks for putting these videos out because I have learned a lot and it has helped me to be inspired again Thank you..

I'm glad to hear that you put yourself on a better path. It's a good thing you didn't as drinking and drug abuse is very common with working so many hours. It's the culture to be aggressive, at least in some busy places.

@Chef Makinson: regarding the "garbage stews" there are several versions of them worldwide, for exaple the "demolition waste stew" in S. E. Asia, using a mixture of leftovers from a previous big banquet or after the new year holidays, with some common fresh vegetables that can be inexpensively purchased in the market. As we can see it originates from economic concerns, as it is a cost-effective way for common family to not waste food and still cobble up a decent dish, under a skilled cook the demolition waste stew can be delicious. But there are rules, such as no fish in the demolition waste stew, or no fried and salty meats together in the stew. Moreover, some people added the over-fat parts of leftover meat (which is usually left due to the exceed amount of fat) into the stew so that the fresh vegetables can dilute the fat down to edible and delicious-able level. And of course there is no arbitray and careless mixture like in Jack's videos, as we have mentioned, the stews have rules and some ingredients simply don't match each others. Do you know about any delicious stew in Europe that make from mixtures of leftovers ?

Personally I prefere a japanese chef´s knife over our western ones, the beluga whale tip tip of Santoku´s simply is a lot more usefull than the slim, western chef knives tip. A good cleaver also always has use in a kitchen, you don´t need an army of knives (knife block) just a few, certain good knives; 4 good knives usually do everything one needs at home. A Wüsthoff Superslicer cuts that down to two knives really needed, only really need one good, smal knife next to a Superslicer.
@Stop_Gooning10 ай бұрын
Chef knife of your preferred style, pairing knife, serrated knife and the cleaver is optional. A filet knife is also a good addition if you process meat or fish.

I find it ironic that the bullet chopper which later became the progenitor of the Ninja corporation of household goods… doesn’t match with your usage… chop onion takes time and skill, bullet chopper 30 seconds to rinse and people with arthritis can use it…

My mother's father used to make food like this.....then every summer he'd throw a party with whole smoked pigs and a few that were basted in pineapple and cooked for half a day high over a large open flame pit. He would set our barrels of maraschino cherries soaked in grain alcohol that could light on fire.....one year he did 10 and I talked them into using the boozy cherry juice with the pineapple we basted it in....and a few sticks of butter just smooshed into its back about halfway through the BBQ. Then he'd blend sour creme ground beef mayo ketchup and pickles and eat it with soup spoon or spatula.....? I would shake my head in confusion....even at like 7. I would eat crispy pork skin for months after ever bbq....I would slice it and cook it with eggs for breakfast before I was in 5th grade. I'm not a chef but I grew up on a pig farm and I know how to cook meat slow to make it tender. I love pot roast... shepherds pie. Pork shoulder pulled pork.....I make my own BBQ sauce with black strap molasses, honey, grain alcohol, garlic, soy and brown sugar. Sometimes I'll try some ginger ahead of time and add to the slow cooker....as the fat renders you keep mixing with the thicker sweet sauces.....I've even added in fruit preserves....peaches being my preferred go to. I don't know why people consider congealed fat whipped together with protein? I'm so averse to mayo that I only like aolie if it's overpoweringly spicy....lemon aolie is intolerable to me. I do like pickles n kimchi but, I generally don't like things that taste like vinegar unless there a lot of other flavors covering it up.

I wanted to vomit as soon as the mayo was mixed into the salad. Absolutely disgusting. Thanks for the warning Chef James.

His methods are really very chaotic, but I don't see the harm in mixing those ingredients, maybe it's not the most normal combination on any cuisine xD but it could surprise in terms of flavor in the end
