So the lab sweet can single dose espresso correct? and you recommend single origin? Why's that?

Absolutely, the Lab Sweet can be used as a single dose espresso grinder. Better yet, the 807 Lab Sweet ESP version is optimized for this purpose. We don't necessarily recommend single origin, but it is common for cafes to use their primary espresso grinders for espresso blends and a secondary grinder for on-demand single-dosing of other coffees. Single origin coffees are just one example.

Thoughts on how burr alignment would effect the flavor of filter style coffee on the Lab Sweet ? I understand they aren't particularly aligned out of the box yet it may taste best this way ?

We've done testing with hyper-alignment with the Lab Sweet. It really doesn't improve the flavor much, if at all. Just make sure you burr chamber is clean and the burr screws have even tension, and you'll get that classic Lab Sweet profile.
