I have a question: Did sears really use such a blade for quartering? I always have a large blade on my butchering table but I move along easier with my “case folding hunter” or my “oldtimer stockman”, plus unless you plan on wasting a lot of meat (and that doesn’t seem like you) there’s just no way you’re going to get those back straps off or remove those hind legs (without a saw) using that giant knife.

He used a moose pattern as part of his trio, which I am sure he used for removing careful cuts and silver skin. To remove the backstraps I used a 19th century thistle head knife but I was very successful removing the silver skin with the Nessmuk. The thin blade and the belly made it pretty easy. I also used the flat of the drop point to scrape off any remnants on the silver skin for the grind pile.

Theres an old deer hunter in japan, his youtube channel is Virtuovice. He does show you how to get to the good stuff with just a hunting knife.

A hoist system for up and down movement, hooked to a spreader bar, hooked in to the hind legs, you would be able to process the deer removing meat from front to back, lowering with hoist as needed, the back legs would the last meat hanging. Work smart not hard.

Agreed. This was a road kill and the legs on one side were busted up, the normal gamble would not work in the tendons. I also normally prefer to take the hind legs on a table anyways. The hoist system I had available was a chain, heavy duty pulley, a solid tree branch, and a riding tractor. 👌 Specialized equipment always makes things easier. Adapt and overcome my friend. Happy New Year!
