Why not use a phone or microwave for testing ? As they are the most harmful one's for EMF radiation ? Just a general question ?

Cellphones provide a very jumpy and inconsistent signal that is difficult to test correctly without a near-field probe. These garments are also not designed to prevent a phone from functioning, that takes a 100% enclosure with very high near-field shielding material. Microwave ovens will have leakage around the door, but it does not go very far. So we use a laptop program to produce a constant signal, ensuring that the ambient reading does not change, and the change that we see is caused by the shielding material.
